Seven Layer Neapolitan Cookies

Seven Layer Cookies are made up of stacked almond cakes, apricot preserves and enveloped by two layers of chocolate coating. There’s nothing average about these cookies. Get ready to be wowed.

I had no intention of making two desserts that involve seven layers in a row. None whatsoever. And it didn’t really dawn on me that I had done so until I took a look at my pictures this week.

I hope you don’t mind. If there’s anything that can beat a regular cookie, it must be one that consists of seven layers.

Seven extremely delicious layers to be exact.

When I found out that these cookies are made up of cakes, I could hardly contain my excitement. Any day that I get to combine two desserts, i.e. cookies and cake into one, is a major win in my books.

I don’t know about you, but I am always so impressed when I see layer cakes and imagine the amount of work that must have gone into creating them. Which is precisely why I had never attempted anything in that arena.

Oh wait, there was that one time when I tried making checkerboard cookies with the help of my brother-in-law and failed miserably. It was around Christmas time, I had just married into the family and all I wanted to do was show off my housewife skills.

Almost six years later, I finally decided to redeem myself.

Seven Layer Bars

One of my all-time favorite cookie bars. It’s hard not to love a bar with a beautiful graham cracker crust, seven layers and sweetened condensed milk.

Seven-Layer-Bars

Hi there! Did you have a good weekend? Around these parts, we enjoyed spending time with family, eating good food and celebrating Easter, of course. I always look forward to Sunday Morning. There’s nothing like getting ready for church, eating a special breakfast and attending worship at our church.

Needless to say, Easter is really close to my heart. I had the opportunity to sing in our church choir this past weekend, and watching countless hands being lifted up while singing songs to God never gets old. I still get goosebumps just thinking about it. Since worship was so sweet and fulfilling, I figured dessert needed to follow suit.

And what better than a pan of bars that consists of 7 layers?? I have been wanting to create this recipe for some time now. It’s practically been burning a hole through my notebook of things to make.

Let’s just say these bars were the appropriate goodies to make for a joy-filled and fun day! [Read more...]

Campfire Saltine Toffee and a Blendtec Giveaway

Saltine Toffee aka “Christmas Crack” meets its summertime counterpart. With the addition of an ooey gooey marshmallow layer, this version is a serious contender. Now you don’t have to wait all year to enjoy your favorite treat!

Have I told you lately how much I love blogging? I mean, one day I can post a salad and the next day a sweet treat that will knock your socks off.

I never know where this journey is taking me one minute or what outrageous concoction I can come up with next.

As promised, I didn’t waste a hot second to get back to the sweet stuff. Now this saltine toffee comes from an intense craving for the kind that you usually make around Christmas time. But since I refuse to think about anything that has to do with colder months, I knew I had to come up with a version that’s appropriate for the (hopefully) warmer days ahead.

If you adore the regular saltine toffee as much as I do, you have got to try this version. Dare I say that I prefer this one over the original? You betcha. [Read more...]

Wait. Don’t reload the page or double-check the link in your browser.

You have come to the right place. But instead of talking about all things sweet, we’re changing the channel for just a couple of minutes today.

Don’t worry, we’ll be back to our regular program soon, but there was no way I couldn’t share this salad with you!

Banh-Mi-Salad

In order for me to post a salad on here, it has got to be out of this world.

Now I’m a sandwich girl through and through. I could eat one pretty much every day for lunch and never grow tired of it. My favorite is a Banh Mi Sandwich. I first tried it last summer with a dear friend at a local place called The Loop and fell head over heels.

I was planning on recreating that very sandwich, but as I was preparing all the veggies, I couldn’t help but make a salad instead. Let me tell you, it was one of the best decisions I made all week :). [Read more...]

Easter Chocolate n’ Candy Nests

These little “Easter Nests” are almost too cute to eat. A fun and easy treat that’s no-bake and comes together in minutes.

Easter-Nests

In case you are still looking for something sweet to add to your Easter menu, I have just the right thing for you today.

I wasn’t sure if I should post a recipe as simple as this one. It basically requires no skill and has been around forever. But when I made these over the weekend, I remembered how much I love these tiny nests and had to put them on the blog.

They were practically begging for it.

Easter-Nests

One reason why these nests are so irresistible is the fact that they hold the trinity of all things delicious. Chocolate, Peanut Butter, and Butterscotch. Combined with crunchy Chow Mein Noodles and finished with Easter candy eggs, they make for the ultimate sweet surprise. Plus, they have that serious cute factor.

Now that’s my definition of Easter Eggstravaganza! [Read more...]
