microwave-caramelsWelcome to the first day of August. I can hardly believe I just typed those words. Let’s just say I’m glad we’re talking about the start of another summer month instead of a colder alternative.

So I’m going to be honest. Caramels aren’t the first thing that comes to my mind when I think of summer. Thermometer, lower temperatures (aka no humidity), and patience are some of the things I associate with caramel-making. Now don’t get me wrong, homemade caramels prepared the traditional way is one of my favorite things to do. I get excited every fall when the conditions are just right and we get to enjoy some caramelly goodness again.

Dinner time has been incredibly easy to pull off lately.

I am a planner when it comes to our weekly meals and always take plenty of time to write my grocery list and meal plan come Sunday night. I never go a week without asking Adam if he needs anything or has a special dinner wish. To which he almost always replies: “Nah, just get the usual and keep making your yummy food”.

Super helpful. Even though I appreciate his sweet comment, I sometimes hope for a different answer. Because even though I’m a food blogger, I still need help thinking of new dinner ideas here and there. Something changed over the last couple of weeks though.

A couple of weeks ago I tried a new recipe for pot stickers, using wonton wrappers. My hubby has been hooked ever since and can’t get enough. I’ve been making them what seems like constantly to me (I get bored fast), but in reality we’ve had them only once a week. Adam would happily eat pot stickers every night if I’d make them.

His excitement for post stickers has inspired me to whip more recipes using those wonton wrappers. It always seems like I have a ton left over and besides creating something else Adam would love, I was also looking for a way to use them up.

Let’s tackle another Monday, shall we? But before we do, can we dwell on the weekend a little while longer and pretend it’s not yet time to get back to reality? Good.

As usual, the weekend went by way to fast. Not only was mine packed with a fun freelance project I’ll tell you about later, but getting to hang out with some of our fabulous friends, chatting it up and playing board games, was another highlight. Nothing says Midwest like a good old game night and a delicious hot dish (also known as casserole, ha).

You probably know by now that I don’t need a special day or occasion to come up with a sweet treat. But I’ve always felt like Friday nights deserve a special something something. And by special I mean a treat that takes not much effort to prepare and tastes out of this world amazing. Preferably a snackable item that puts you in just the right mood as you exhale and realize it’s weekend time!

Exactly what I’m going to give you today. Yes, there’s such a thing as brownie bark/brittle. Can you even imagine my reaction when I first discovered its existence?

I am not picky when it comes to brownies. I’m just as happy about a gooey middle piece than I am about a chewy corner. Adam on the other hand is all about the corners.

If you are anything like my hubby, you will love this bark. While there is a noticeable chewy texture throughout the entire bark, it’s also on the crunchy side, which is why it’s so addictive. One of the best Mexican Restaurant treats around. Hands down. I had been intrigued to try my hand at making homemade sopapillas for the longest time. Last Saturday I found myself asking what I was waiting for and decided to dive right in.

Sometimes recipes that aren’t planned and just sort of happen, turn out to be the best. Nothing compares to a pile of freshly fried and golden pieces of beautiful sopapillas, especially when they come in a miniature version, are still warm and doused in honey.

Sopapilla dough is reminiscent of pizza or even bread dough – a very light and fluffy version. When I first laid eyes on sopapillas, I thought that they looked like donuts and put them into the same category. But they don’t really compare to donuts. They are not as sweet and the texture is completely different. It’s a treat that’s very distinct in taste and something you have to try to fully understand.
