Thanks for spending part of your holiday weekend with me. I hope you’re having the best Memorial Day so far, surrounded by friends and family, being thankful and grateful, relaxing and enjoying some excellent food. I also hope you’ve saved some room and are completely ready to whip up one of the tastiest summer desserts I’ve made up to date. I’m not even kidding or exaggerating.

I never knew that I could develop such a love for rhubarb. To be honest, before making today’s squares, I wasn’t particularly interested in said vegetable and may have avoided trying it for the past quarter of a century that is my life.

But after a ginormous rhubarb plant (we inherited) started to stare at me every single day since moving house just a couple of weeks ago, I simply couldn’t ignore it any longer. So I asked Adam (since it was pouring outside) to brave the weather for me, harvest our rhubarb, and that I would make him a delicious dessert in return. Happy Friday, friends! Today we’re returning to one of my very favorite topics – breakfast. I don’t think I’ll ever tire of talking about how my relationship with breakfast has changed since starting this blog. Whether healthy and energizing or straight up indulgent, after almost 2 years, I seriously love it all.

So what’s the first thing you think of when you hear the word breakfast? Pancakes is always the first thing that pops into my head. Seven years ago when Adam and I were newly married, I had absolutely no idea how to cook a meal yet alone bake cookies. The day I mastered pancakes with the help of Bisquick was a wonderful one.

There’s nothing like fresh fruit in the summertime. The amount we’ve been consuming lately is slowly getting out of control. With no end in sight since the best of summer’s produce is yet to come. With Memorial Day right around the corner, I really wanted to make a fun dessert that showcased my love for chocolate and fruit once again. Plus, it’s been a hot minute since my last brownie dessert.

We’d stopped at Pizza Ranch to enjoy a quick meal with family. If you’ve been there before, you know that one of the highlights is their dessert pizza. Now, they don’t offer the brownie and fruit version you see here, but as I sat their devouring my two slices of their “Cactus Bread”, I secretly was craving something with a bit more chocolate and chewiness.

Welcome back, everyone. Did you have a good weekend? We attended number 1 out of 4 graduations this past weekend. Celebrating my brother-in-law’s achievement of becoming a graduate student and moving on to the next chapter in his life.

During the ride to Kansas and even on our way back, I was certainly dreaming of the frozen drink I’d made just a couple of hours before. Friday’s recipe inspired me so much that I couldn’t let the caramel-chocolate-pretzel combo go. I was having too much fun playing around with some of my favorite flavors when it comes to all things sweet.

It has recently come to my attention that Blondies have suffered some serious neglect in the Deliciously Yum household lately. Which is such a shame given the fact that they are one of our favorite treats to enjoy. Mostly because they’re so versatile and can be switched up in many different ways. Once you find a perfect base recipe, all options are open to you. It’s one of those recipes that don’t require a lot of ingredients to prepare, can be made in one bowl (yay for minimal cleanup), and loves to showcase the add-ins you choose or the leftovers you’re looking to use up, hehe.
