Breakfast foods have been high on my list lately. And that is a big deal for me. I’ve never been one who enjoys eating in the morning and usually wait to have a light snack at around 10 or so. I am anything but hungry in the early hours of the day and the most I usually go for is a warm cup of tea. That is not to say that I don’t love the food in and of itself though – just at a much later time. I’ve been dreaming up all sorts of breakfast concoctions and couldn’t wait to make these bright and cheery waffles.

I sort of love the rustic look of these. I used a regular waffle iron to make these, but instead of filling each square with enough batter to make a perfectly symmetrical waffle, I used less batter and was left with the cutest little things. Not only do they look adorable, but since they are smaller than your regular waffles, you get to enjoy a high stack of waffles paired with luscious butter and syrup. So good! [Read more…]

This is the result of yet another weekend of being buried in snow and giving in to my cravings. Saturday morning was spent on our couch watching the snowflakes fall. It was truly beautiful, but we soon ceased to be amazed at our winter wonderland when snow throwers and shovels called our names. Overwhelmed to say the least. Almost three hours later we were back on our couch not being able to move a single finger. For 5 minutes. Because as soon as I sat down, I had to have something containing carbs. And nothing can keep me away from food, no matter how much snow comes into way. I have to admit that I proceeded to still my hunger with a turkey sandwich and lots of extra cheese (Fontina rules my world lately) on the side. Monkey Bread made from scratch takes a while to mix up, so I settled for indulging the following morning.

Chewy Monster Cookies

Let’s talk memories. I have always been able to remember things pretty well. It rages all the way from retaining weird information like random people’s birthdays to important things like which recipes I’ll be sharing here. I have list upon list in my head and should definitely focus on writing things down more frequently. Yeah, I’ll get on that.

Anyhoo, no matter what you’re able to retain, one thing most people tend to store really well are memories related to food. It goes without saying that this form of memory doesn’t require much practice or much of anything really. They’re basically built in, which means they must be suuuper important. Even though I feel slightly overwhelmed from time to time and am embarrassed to admit how much of my current thoughts and recollections are consumed by food, I wouldn’t have it any other way.

It brought about these fabulous cookies after all.

It definitely was love at first bite. I had these cookies for the first time at my friend, Aimee’s house.

She whipped up a batch of these just in time as we started to settle in to watch one of our favorite shows. It was probably The Biggest Loser or something. ‘Cause that what you do, isn’t it? Skinny Mozzarella Sticks

I am not a huge fan of fried things. Never really have been. I make exceptions for scrumptious desserts, but even then I like to go with a shallow fry, like extremely shallow. It’s not just the calories that are less than appealing, but the greasy texture and oily film coupled with the heaviness of such foods are a big turnoff. And don’t even get me started on the mess. The splatters, smell, and cleanup are a neat freaks’ worst enemy. Yep, I better admit it now. I clean up as I go through my kitchen adventures, own an extremely organized pantry, and rinse every single dish before it meets the dishwasher. I just can’t help it. So when I came across a recipe for baked mozzarella sticks a few years back, I couldn’t wait but to give it a try.

*Drool factor. No, serious drool factor. I made these during the lunch hour the other day and couldn’t have been happier about my meal. Warm, melted cheese wrapped in a crispy coating of more cheese and bread crumbs. Dipped in marinara sauce. To say I was a happy camper would be an understatement.

I’ve been on a no-bake kick the last couple of days. I can’t tell you how much fun I’ve had throwing things together and see what the outcome is. Peanut butter has been in the center of it all. You can pretty much pair anything with that delicious nut butter and have a fabulous-tasting concoction. After all of my experimenting, I had some leftover ingredients. As I looked at the caramels, pretzels, leftover chocolate bars, peanuts, and peanut butter, one thing came to mind. I had everything on hand to make my very own version of Take 5 candy bars. There are no words how excited I was. Yep, I’m easily entertained.

Oh, and the fact that I added a sprinkling of sea salt to the top probably won’t surprise you. Pretty much anything containing chocolate deserves a sprinkling of coarse salt. That’s the beauty about making your own version of something you love – you can make it even better by adding other ingredients you can’t live without. Brilliant! [Read more…]
