Chicken and Bacon Wild Rice Soup

One thing is pretty clear. My massive sweet tooth has definitely taken over this site. When I started out blogging I had no idea where this journey would take me. Everyone around me could have predicted the outcome since I’m pretty much known for my desserts by our family and friends. I was clearly in denial – not because I don’t like baking and creating sweet treats or being known for them, but because I like cooking just as much. Don’t worry, desserts and sweet delights will continue to take center stage with savory bites here and there, but today I needed to bring you this fabulous soup. Another thing I adore to make, especially during the colder months, is soup. I love soup and can’t think of anything more comforting than a warm bowl of deliciousness with a crusty piece of bread on the side.

Minnesota is known for Wild Rice. Pretty much everyone here has their own version of Wild Rice Soup and it’s a huge favorite in our house as well. It’s hearty, filled with wholesome grains and super creamy (even without the addition of dairy). I added bacon because, well, do I really need an explanation? Everything is better with bacon and that statement holds definitely true for this soup. It’s perfect!

In preparation of tomorrow’s blog post I decided to show you exactly how I make my own Cream of Condensed Soup. I stopped using the store-bought kind about two years ago and have not looked back since. It’s a win win in our house on so many levels. My recipe has only 4 ingredients and takes almost no time to make. It is so versatile and can produce any condensed soup you’re in need of celery, chicken, mushroom, tomato and the list goes on and on. We will be using a “can” of condensed cream of chicken soup in tomorrow’s recipe, which is what I made here.

You won’t need to keep various cans stocked in your pantry anymore and you’ll definitely be saving some money. I did the math and figured out that the homemade version comes to about 88 cents per can, which is almost half the price of the one you can purchase at the store. Another reason why I make my own condensed soup is that my husband is lactose intolerant which I have mentioned in previous posts. I use almond milk instead of regular milk to produce creamy yet lactose-free dishes for my husband to enjoy. It works like a charm! Feel free to customize the recipe to your dietary needs. Here’s how: after drinking 3 large cups of tea (with the help of my new Keurig – love that thing), trying to concentrate on reading and keeping myself occupied with housework, I was no longer able to resist the urge of entering my kitchen to whip up something containing loads and loads of peanut butter. It goes without saying that chocolate had to be part of the cast of characters because you never separate best friends. Peanut Butter & Chocolate = BFF.

You see, I was avoiding our kitchen all morning because I knew that me being trapped in the house with a pan of these bars could cause major damage. To my waistline, thank you very much, MN Snow/Frozen Tundra Day. The fact that these bars take almost no time to make or work to prepare, wasn’t helping my case. I was left with no excuse why I had to stock up on calories after working so very hard in the kitchen. But yeah, I still could not be deterred from eating an undisclosed amount of these.

It is official! Minnesota is trying to become the coldest place on earth. The Governor closed all schools in the entire State for today. With a temperature of -57 degrees (including wind chill), we have declared a pajama day. There is absolutely no way I’ll be stepping a single foot out of our door, which means hot chocolate and tea will be my best friends today. Oh, and these cookies. As I sat contemplating the drastic temperatures we were about to encounter, I couldn’t help but dream about warmer weather. And what is better than a perfectly roasted marshmallow paired with a piece of chocolate and hugged by two graham cracker halves? Possibly these cookies. Jelly Doughnuts

The beginning of a new year calls for Jelly Doughnuts. Not just any doughnut will do – they have to be filled with strawberry jelly. Why? I’m not quite sure. Ever since I was a little girl, I remember my mom serving jelly doughnuts sometime during the first couple of days of the new year. It’s one of my favorite traditions…. because, um, they’re doughnuts!!! When everyone makes resolutions of living healthier and looks forward to a fresh new start, we got a break and were allowed one of the fluffiest and most scrumptious doughnuts I’ve ever tasted. After that, we had another 365 days until jelly doughnuts would be allowed for breakfast again. Now you know why I’m so excited to share them today!

Since I have had many years of tasting the most amazing jelly doughnuts from a teeny local bakery, you can be sure that these doughnuts had to endure an extremely picky and choosy palate. I could not believe how authentic these tasted. Food that brings you back to your childhood always is the best kind. These came so close to the real thing – I am not sure I’d be able to tell the difference between the original and my homemade version. So awesome and dangerous at the same time. Hopefully I won’t have to break my mom’s rule of having these only once a year!
