Hi Everyone! First of all, I have to apologize for our recent website troubles. To make the long story short, we were in the process of switching host providers, while in the middle of the transition, our old host decided not to cooperate, which caused some down time for Deliciously Yum. I am pleased to report that the switch has been completed and we should have smooth sailing from now on.

This entire process has been so frustrating, but we really think it will be worth it in the long run. So, thank you for sticking with us and practicing patience. You guys, I never thought I could be this excited about a granola bar. I mean, granola bars are one of our go-to snacks and are always available in our house, but they aren’t super special, if you know what I mean. A couple of days ago, I decided to make my own. With St. Patrick’s Day right around the corner, it seems like the internet has been exploding with green and mint-themed desserts. I absolutely love it since peppermint is one of my favorite flavors when it comes to the sweet stuff. It also gives me hope knowing that Spring is officially less than 30 days away – can’t wait for green grass, abundant trees, and beautiful flowers to emerge everywhere. Oh, and sunshine. The thought of sitting outside on our deck and soaking up some rays makes me giddy beyond belief. But until then, these peppermint patties will have to do.

Now I know I talked about how much I adore the color green in pretty much everything right now, but there’s something I love just a little bit more: York Peppermint Patties. And there ain’t no green in them!

I wanted my first attempt at making my own peppermint patties to be as close to my favorite version as possible. And that includes the way they look. Nothing beats the beautiful contrast between dark chocolate and the beautiful white interior. Whoever came up with the idea for these definitely knew what they were doing. We recently ate at Texas Roadhouse twice in one week. And just like everyone else, the one thing we look forward to the most are their amazing rolls. Before they opened a restaurant in our area, I had never been to a Roadhouse before. People kept telling me that I would love their rolls and just like everyone else, I was instantly hooked. But in order to save ourselves some money and time, I decided to make my own rolls.

As promised, we are putting to good use the Salted Caramel Sauce we made yesterday. For me, the combination of salty and sweet doesn’t shine more than through a cookie. And there is no better recipe to do it with than this one. These dark, fudgy, and triple chocolate cookies are beyond delicious all on their own, but once you stuff them with caramel, you will never look back.

The reason why I am so enamored with these cookies is that they taste like individual brownies. It’s the best thing ever. Especially since I’ve been on a brownie kick lately.

I really have been wanting to take some time to tell you all about how to make this wonderful caramel sauce. I’ve been making it for what it seems like forever now and honestly feel bad that I haven’t shared it with you sooner. I remember how intimidated I used to be at the thought of the whole process and how much easier it seemed to melt the packaged caramels. There is absolutely nothing wrong with that, but by the time you’ve unwrapped all the individual squares, you could have made your very own sauce from scratch. It’s that easy.
