Fudgy Peanut Butter Brownies with Chocolate Shavings

Fudgy Peanut Butter Brownies with Chocolate Shavings by Deliciously Yum!

I hope you’re hungry today. These brownies require a healthy appetite coupled with an incredible craving for chocolate and peanut butter. All I’ve been wanting to eat the last couple of days have been tomato soup and brownies. Odd? I think not. It makes perfect sense to me. These two things are what comfort food is all about. And believe me, we are in need of massive quantities of comfort and positive thoughts during yet another snow storm, scheduled to arrive tomorrow.

Not only do I feel like I’ve earned the right to replenish my burned calories of snow shoveling with sweet treats, but I’ve been enjoying this winter in regards to what it’s done to my creativity in the kitchen. Some of the best desserts have emerged as a result of being snowed in all day. These brownies are definitely part of that group!

Now don’t get me wrong, I would happily trade winter coats, boots, and hats for t-shirts, shorts and flip flops, but who knows if this crazy peanut butter frosting to brownie ratio would have been born. That’s what I love most about these treats. There are almost equal amounts of peanut butter and fudgy brownies in every bite. It’s as good as it’s gonna get, guys. [Read more…]

Black and White Bakery-Style Doughnuts

Black and White Bakery-Style Doughnuts by Deliciously Yum!

Can you handle another sprinkle-filled post? I really wasn’t planning on topping these doughnuts with colorful sprinkles, but once I dipped them in a luscious glaze, they practically begged for some. And I just wasn’t tough enough to say no. Now that I am looking at these doughnuts, I am more than glad I grabbed a handful of rainbows. Never say no to sprinkles – lesson learned.

Doughnuts are one of my favorite breakfast items, snacks, and desserts. I love their versatility. I guess you could say I am somewhat obsessed. Always have been. It’s the one thing I could never say no to – my kryptonite, if you will.

Since I am such a doughnut fan, I was extremely hesitant to trying a baked version. I thought it sounded well in theory, but didn’t think they would satisfy as much as the “real” thing. Boy, am I ever glad to tell you how wrong I was. I am positive I’ve never been more surprised or more elated when my misconceived notions were shattered in our small MN kitchen. If you haven’t already, you have got to try these! [Read more…]

Cake Batter Golden Oreos Rainbow Cookies

Um, I stuffed cookies with cookie sandwiches and added cake mix, too. Can you tell it’s Friday?

Being the cookie addict that I am, I couldn’t wait another minute to whip these up. Oreos, cake mix, and don’t forget about the sprinkles. This combo is one of my favorites yet. It features everything I get most excited about. It may sound like a lot of different things thrown together into one cookie, but it works so well. A joy to look at and a partay in your mouth.

You won’t have to decide between cake or cookie anymore – you can have it all!

These cookies are a riff on my Thick and Chewy Reese’s Chocolate Chunk Cookies. I didn’t feel like playing around with a new recipe. I was looking for tested, approved, and foolproof. And I got exactly what I was hoping for. Incredible deliciousness. [Read more…]

Homemade Beignets

Homemade Beignets by Deliciously Yum!

On my way to work the other day, I saw a sign advertising a visit to New Orleans during Mardi Gras. It captured my attention instantly because I’ve always wanted to go. Yeah, I guess I’m a marketer’s dream. But apart from the well-designed billboard, my longing to visit New Orleans started to well up yet again. It steadily holds #1 on my list of places to go.

It all started two years ago when my husband and I planned a trip to Louisiana. I had done my research and had completely fallen in love as I planned our agenda of things to do and places to eat. Days before our scheduled departure, my husband fell ill and we sadly had to cancel our much anticipated trip to the south.

As I was thinking about that trip once again, I decided that I had waited long enough for fresh beignets (one of the things I was dying to try). It was time I made my own homemade version.

Oh, yes. Southern food has officially made it’s way into our little MN kitchen and there’s nothing I’m more thrilled about!

I have four words for you: Pillowy, Fluffy, Airy, Perfection. [Read more…]

Loaded Quadruple Chip Cookie Bars

I made you one of the easiest and most incredible desserts today.

Loaded Quadruple Chip CookieBars by Deliciously Yum!

These cookie bars are a first for me. When I opened my cabinets last weekend, I was met with leftover baking chips in pretty much any variety. Lots of small quantities that I wanted to use up. Cookies were the first thing that popped into my mind, but I was running short on time and needed a one-pan dessert recipe that required little cleanup. So I started to think about my regular chocolate chip cookie recipe and decided to turn them into bars.

No idea why I never thought about doing that before. I mean, it’s like one giant cookie and you get to decide how big your piece is. Pretty much the best thing ever.

Lots and lots of chocolate in every bite. Ooey, gooey and perfectly melty. Anyone with a sweet tooth will go crazy for these, especially if you love cookies, then you are in for a real treat. [Read more…]
