Chocolaty Peanut Butter Truffles

Chocolaty Peanut Butter Truffles by Deliciously Yum!

So, I keep a list of recipes I want to make and publish on the blog. Over the last couple of months it has gotten quite a bit longer as you might imagine. It’s saved on my computer and everything is neatly organized, but I rarely take a look at it. The funny thing is that I have 3 additional lists laying all over our house – one in our silverware drawer, the second one next to my bed (you won’t believe how many recipes you see here were developed in the middle of the night. There a quite a few nights during which I toss and turn and finally decide to write things down, just so I can go to sleep), and the third one is taped to my laptop. A good old post-it note that has around 20 recipes on it. It’s anything but pretty, but I wouldn’t have it any other way. One thing a computer can’t give me is the satisfaction of crossing things off that list.

As I completed all recipes on my last note and was about to throw it away, my eyes caught a glimpse of “peanut butter truffles”. I quickly unfolded it and sure enough, I had missed one recipe. As I sat starring at it in disbelief, I knew the only cure was to get up and start rolling.

Looking at these, I know it was meant to be. No question about it. I just wish I had made them sooner! [Read more…]

Thursday Love List

grateful via

1. It feels like forever since I’ve done a Love List and honestly, it has been. January somehow zoomed by, so I knew I had to write this months’ list ASAP. I love doing these posts and I hope you enjoy them, too. It offers a break from our regular programming and gives me a chance to share some other things I adore besides food!

I wanted to start by saying thank you and just how much it means to me that you take time out of your busy schedules to stop by and share the love. I will never grow tired of expressing my gratitude because I care about all of you so very much and I feel incredibly blessed. It is such a wonderful feeling to wake up each day, knowing I get to do something I absolutely love. I can’t express what it feels like to pull up my blog in the morning (or any time of the day, really) and see your sweet comments and emails. Thank you doesn’t even come close to expressing my gratefulness, but I hope you know how much you are appreciated!

2. I am so excited about the Winter Olympics that I can hardly contain myself, but it’s finally here! Today! Just in time since football season has officially come to an end. Like most people, I look forward to watching the popular sports like figure skating and skiing, but am also excited about all the new sports being introduced this year. Go Women’s Bobsled Team!

3. These picture have been around a while, but I needed to include them in this post. Stunning!

4. My husband and I watched the Creation vs. Evolution debate on Tuesday between Bill Nye and Ken Ham. Even though it’s pretty long, we enjoyed it very much. If you’re interested in that sorta thing, you can check it out here. Definitely recommend!

5. I’ve been wanting to use my camera more for personal use and am looking for a great “photo a day challenge”. If you have any you tried and liked, please let me know. [Read more…]

Very Berry Banana Smoothie

Let’s celebrate the middle of the week with this yummy smoothie!

Very Berry Banana Smoothie - Deliciously Yum!

I have to be honest, I am not a huge fan of smoothies in the middle of winter and was somewhat hesitant to making this one. But as I started to browse the grocery isles and saw all the beautiful colors going into my cart, I instantly changed my mind.

Not only was I excited for a huge boost of nutrients, but I was almost as giddy about the pops of purples, reds, and pinks that would hopefully form a fabulous concoction. The girly girl inside of me quickly took control. And I decided to let her take over this one.

If I had to choose one thing to have for breakfast each and every morning for the rest of my life, it would probably be this smoothie. A huge statement considering that I hardly ever take a minute to eat breakfast at all. Just another reason this smoothie deserves a medal or something. It has special powers – the ability to change breakfast haters’ minds. Whoa!

Maybe it’s because it doesn’t feel like I’m eating an actual breakfast. It’s almost like having a snack on the go, which is totally my thing. Or maybe it’s because I feel a tad bit naughty slurping a tall glass of this deliciousness, since it reminds me so much of my favorite part of any meal – dessert! And it’s healthy – no added sugar, no weird ingredients, and every bit as scrumptious as an indulgent treat. You could totally satisfy any sweet tooth with this Very Berry Banana Smoothie. Cake Batter Bark

Cake Batter Bark by Deliciously Yum!

February is finally here, which means I can start writing about Valentine’s treats. This holiday is one of my favorites when it comes to food or should I say dessert?! No day is more appropriate for covering any and everything in chocolate and getting away with a healthy dose of sprinkles. Heart-shaped sprinkles nonetheless.

This bark looks like your average chocolate bark except for it is not. It has cake mix inside of it. It tastes like cake, you guys. I know – it sounds totally crazy, but it’s absolutely incredible, like world-changing. At least your taste buds’ world.

If you like cake batter treats, you will go bonkers for this. Just like I did. You get the best of two worlds. White and Dark Chocolate in one. Since chocolate is one of the stars in this recipe, you should use a good quality chocolate. I think it makes a huge difference here. I used Lindt chocolate bars, but feel free to choose your favorite.

All you need is 10 minutes, some delicious chocolate and colorful sprinkles. Easy as can be. [Read more…]
