No-Fail Triple Chocolate and Mint Blondies via Deliciously Yum!

I am seeing a whole lot of green and couldn’t be happier about it. Over the weekend, I finally managed to whip up a recipe fit for St. Patrick’s Day and since this was my first “green” recipe this year, I couldn’t help but stuff as many things as could possibly fit into these blondies.

Chocolate and Mint is one of my very favorite flavor combos. So I may or may not have gone a bit overboard at my weekly grocery trip last week. I basically filled the cart with my go-to mint candies – Dark Chocolate Covered Mint M&M’s, Andes, and last but certainly not least Mint Oreos. The lady at the checkout gave me a huge smile as she scanned all of my green treasures, which led me to believe that buying that much candy during one trip is perfectly acceptable and that I might not be the only one going a little overboard with all things mint this time of year :).

Every day for the past four days after returning home from work, I immediately open the fridge and pull out 3 to 4 of these amazing bites. I am practically drawn to them after thinking about these for most of the day. I just can’t help it.

I may have created the best no-bake snack to ever come out of my kitchen. And I am not exaggerating.

Pancake Poppers

Pancake Poppers by Deliciously Yum!

It is no secret that pancakes are a favorite in our house. For breakfast, lunch or dinner. It’s one of my go to meals for meatless Monday, actually. My husband is more of a traditionalist when it comes to pancakes. He never requests any add-ins and is perfectly content with plain pancakes drenched in syrup, of course. He could eat the same thing every time.

One of the reasons why I started this blog, was so I’d have the ideal excuse to try out new recipes and let my creativity go wild. It’s one of my most beloved things when it comes to writing about food. So, it was only a matter of time before I’d get bored with flipping one pancake after another.  And shortly after, Pancake Poppers were born.

Hi there! How was your weekend? Ours was busy, fun-filled and made that much sweeter with our annual trip to the MOA. Even though my hubby doesn’t get too excited about shopping, I can honestly say that getting to spend time together and strolling through America’s biggest mall, makes for one happy couple. Also, I can hardly put into words how pumped we were when we realized that March had begun and Daylight Savings Time is almost here. Seeing the sun past 5 PM feels so strange, but it’s exactly what we need – warmer and sunnier days are definitely ahead. Lots and lots of good things to be grateful for.

Also, Chocolate Chip Cookie Dough Brownies.

I am not sure if I went too far with this one or not. These brownies have been swirling around in my head for a couple of weeks now. When I couldn’t wait much longer, I baked my go-to brownie recipe and topped it with my chocolate chip cookie dough, which I tweaked a bit to make an egg-free version. Crazy or genius? You decide.

Whenever I make a batch of chocolate chip cookies or any cookie dough for that matter, I am sure I consume a ridiculous amount of raw cookie dough. It is my very favorite part of the entire cookie making process, so I figured it was about time to come up with a dough that would be safe to eat raw. I am so thrilled with the result of this cookie dough and piled on top of perfectly baked brownies? I am convinced there is no better way to eat these two. It is ah-mazing! [Read more…]
