Fruity Chocolate Dipped Coconut Macaroon Pyramids

Coconut Macaroons loaded with dried cranberries, blueberries and mangoes. Enveloped in dark chocolate and finished with crushed pretzels and a trio of fruit.

I don’t know what’s happening, you guys. I feel like I’ve been putting coconut into pretty much everything lately. Which is weird since I never really liked it.

But. Somewhere along the lines, I figured out that toasted coconut tastes nothing like what I remembered. It’s sweet, caramelized, slightly nutty and develops a beautiful texture. And I can’t get enough.

So I decided to go all out and test how much I actually like coconut. I knew I wanted to make a cookie of some sort. Going for that toasted goodness I am so in love with. And then I stumbled upon this recipe. It kept swirling around my head over and over for several reasons.

Not only was it totally customizable and pretty to look at, but it had lots of perfectly browned and crispy edges all around. And isn’t that the best part of coconut macaroons? Plus, if all else fails, these pyramids would be covered in chocolate, which makes it pretty much impossible for these little things to taste anything but amazing. [Read more…]

Hi! How was your weekend?

I thought I’d post this recipe today to savor the weekend a little bit longer. We had a jam-packed couple of days including tackling some projects around the house, squeezing in a couple of runs and going on a fun date together. Time sure seems to be flying by when the weather is improving and you can finally step outside without having to worry about frostbite or slipping on a piece of ice.

Late Friday night, I decided that we would be enjoying our much loved Blueberry French Toast the following morning. Never mind that it was getting kind of late since this breakfast casserole can be whipped up in mere minutes.

I didn’t really have any intentions of posting this recipe. Not because I didn’t want to share it, but this recipe has been around for so long now, that it simply didn’t occur to me to put it on the blog. Until I pulled out the recipe and realized that the original is nothing like the one I use now to make this casserole. It has undergone many changes over time, all of which were stashed in my memory. Nutella Rice Krispie Easter Candy Mashup Brownies

Give me two minutes in the Easter candy isle at Target and something like this is the only possible outcome. Literally feeling like a kid in the candy store. Apparently not much has changed since I was 12 years old.

The only difference is that nobody can stop me from stocking up on candy (to last me a lifetime) and mixing it with Fudge Brownies and Nutella Rice Krispie Treats.

Being a grown-up does have its perks.

I am blaming my impatience on how these brownies came to be. I knew that I wanted to create bars that included Easter candies, but at the same time I really had a craving for Rice Krispie Treats and Nutella. I know! It’s that darn sweet tooth of mine. It really has a mind of its own. What can I say?

But instead of waiting to make Easter Candy Brownies and Nutella Rice Krispie Treats, I figured combining the two would be even better. And you probably guessed it by now.

Raspberry Lemonade with Fresh Mint

My obsession with berries and lemons is at an all-time high. So much so that I had to find a way to consume even more than I already do :).

A couple of days ago, MN experienced the warmest day of the year so far, which had me longing for a cold glass of lemonade and this wonderful version was born shortly after.  

May I add that this was my very first time making lemonade from scratch using real ingredients? Guys, this is a must-make and a must-taste. It will have you seriously question the stuff you can buy in a bottle or make from a powder or concentrate.

Carrot Cake – yay or nay? It’s been a long debate in our house.

Before I married Adam, I always thought carrots were a vegetable that everyone loved. You know, sort of like corn, peas, broccoli or green beans. Vegetables that are mild in flavor and make a frequent appearance on dinner tables around the country.

Since I love eating most vegetables, it never occurred to me that I could be sharing my life with someone who isn’t a huge fan. Over the years, I have had to get creative with sneaking in vegetables or simply not mentioning that my sweetie was chowing down on turnips and not regular potatoes :).

A method that has served us well so far. Except when it comes to carrots. Apparently carrots have such a strong taste that they can ruin an entire meal. Who knew?

So when I mentioned a couple of weeks ago, that I’d been really wanting to try to bake a carrot cake, you can probably imagine the look I received. There was no convincing that a dessert could include vegetables, much less carrots.

But with Easter getting closer and closer, I could finally stand it no longer and set out to create a carrot cake that would please a self-proclaimed vegetable-avoider. [Read more…]
