Oatmeal Carmelitas

 The combination of chocolate, caramel, and nuts is irresistible. I don’t know of anyone who is not tempted and enticed by these yummy bars.

I am sorry to be doing this to you. Being that summer is just a couple of days away and most of us are trying to get ready for swimsuit season. But sweet treats here and there are still allowed in my house. Plus, there’s oatmeal in these. Does that count as a semi-healthy dessert? I think yes.

Carmelitas have always been one of my favorite bars. How funny is it that I had never made my own before? Fruit Frenzy Pastry Cups

It struck me on Wednesday that Memorial Day weekend is next week. How crazy is that? Please tell me I’m not the only one who was clueless until two days ago…

Once I realized that summer is just around the corner, my fruit cravings immediately set in. So of course it was only a matter of time before I would make a dessert featuring some of my favorite fruits.

They had to be miniature and come together in a matter of minutes. I am the least person who wants to be trapped inside working on dessert while the beautiful Minnesota summer lasts – time is of the essence. We’re not taking any second of the warm rays for granted :).

I am tempted to say that you only need 3 ingredients to make these. Puff pastry, whipped cream and the third one being fruit. Can I count that as one ingredient? I’m confused, but I am going to go out on a limb and say that fruit counts as one ingredient. You could use only one kind of fruit after all. But let’s get not too technical. Okay? Good. Chocolate Banana Crepes

I know I keep saying I’m not a breakfast person, but I sure love breakfast foods. Making homemade crepes had been on my mind forever. Since the beginning of this year actually.

A couple months back when my husband and I went on our annual shopping trip to the Mall of America, we passed their little crepes shop that offers them in any and every way. They have the most amazing flavor combinations, but the Nutella Crepes caught my eye (I know. Big surprise). I was set on getting one until I got close enough to read the prizes on their menu.

After overcoming the sticker shock, I still wasn’t comfortable with spending 7 or 8 dollars on one crepe. But that didn’t mean that I was over crepes in general. Oh no. I knew homemade crepes were in our near future.

Monster Cookie Bars

Happy Monday! How was your weekend? The last couple of days just seemed to be flying by for us and I seriously can’t believe Monday is already here. Time sure goes by fast when you’re having fun!
We got to celebrate a graduation on Friday, traveled to Iowa to spend time with my best friend’s family and her new baby boy and finally got together for Mother’s Day yesterday. Love all the wonderful people we are so blessed to have in our lives and that we get to be part of theirs.

Since we’ll be attending quite a few more parties and outings in the next couple of months, I started to think of new dessert ideas that I could bring with us. Cookies and bars were certainly on top of my list and since I have a hard time making up my mind, I once again combined the two.

One of my major weaknesses are Monster Cookies. So when these wonderful cookies crossed my mind, I didn’t hesitate to turn them into bars. [Read more…]

Banana Bread Muffins

So I may have mentioned here and there that breakfast isn’t really my thing. I’ve always been much more of a grazer than a person who eats 3 meals each day. The only “real” meal I consume is at dinner time when my hubby and I get to sit down together.

I like eating small portions whenever I get hungry and that usually starts somewhere around 10 AM or so. One of the many reasons why I love brunches so much; whoever invented those definitely had me in mind, ha.
