Few things get me as excited as Pizza Night. Not only do I love eating pizza, but I enjoy the whole process of making it as well. While I have yet to master the throw-your-pizza-up-in-the-air-and-catch-it technique, I am pretty sure I’ve figured out how to make homemade pizza just the way we like it. We are traditionalists when it comes to pizza. A simple pepperoni or Hawaiian pizza made with a thin crust has our names written all over it.

And my Type A personality loves being in control of all aspects of the pizza-making process as well. While my hubby’s side of the pizza usually has just a couple of pieces of shredded cheese because of his lactose sensitivity, mine is loaded with the good stuff. Happy Monday! How was your weekend? Did you get to do something fun?

Our weekend was filled with beautiful weather, spending some much needed time with friends and a visit to the Farmer’s Market. It was the opening weekend for said Farmers’ Market and I was THIS excited to go. There are some things that are essential to summer and paying a visit to the Farmer’s Market is definitely one of them.

I loved seeing all of the fresh produce and beautiful flowers – such a great sight after a pretty long and tough winter. Also, I totally forgot what it feels like not being wrapped in 5000 layers of clothing and feel the warm sun. So good!

Oh, and I finally got around to watching “Frozen”. Yeah, I realize I am probably the only person who hadn’t seen it. Always behind on current trends – but better late than never, ha!

It’s not even funny how much I was able to relate to Olaf. My reaction to the wonderfully warm weather this weekend was pretty much the same as his when he started the fire in the fireplace. So glad I finally know what the hype is all about – now can someone please tell me how to get the songs out of my head?? [Read more…]

Trio of Mini Cheesecakes (Dairy-Free)

A couple of weeks ago I challenged myself to find a recipe for dairy-free cheesecake. I probably mentioned before that my husband has developed an intolerance against lactose. Recipes that contain small amounts of butter or even chocolate, usually go over fine. I have found that substituting almond milk for regular milk works extremely well in most recipes, too.

But I was sort of stumped when it came to cream cheese and had made a mental note that cheesecake would probably not be in our future again. But since I like a challenge and don’t give up easily, I changed my mind and was determined to figure this one out.

Also, I wowed that I would never put anything on this little blog of mine if it didn’t taste absolutely delicious. Good thing I live with one of the most amazing food critics. Adam is somewhat of a picky eater and yes, sneaking in vegetables and other “weird” things has become part of my regular routine, ha.

To be completely honest, I was worried about having him taste-test this one. I thought these mini cheesecakes tasted amazing, but there’s always the bias factor… so I finally handed him one of these little cakes. [Read more…]
