Welcome to another Monday. How was your weekend? Ours was packed with lots of friends and family time – the best kind. Even though we barely spent a couple of hours at home, I was able to whip up some fun things perfect for the 4th of July that I will be sharing this week. It was about time that I made something yummy to celebrate the holiday with, especially since Independence Day is one of my faves.

Seriously. Independence Day has always been about swimming in the pool, having a BBQ, enjoying good company and watching beautiful fireworks while appreciating our nation and all the blessings we receive as Americans.

Dark Chocolate Mocha Avocado Mousse

 Dark Chocolate, Espresso and Avocados make for one incredible mousse. A decadent dessert without the guilt!

So, avocados. I’m going to let you in on a little secret and I seriously hope we can still be friends. Up until 3 weeks ago I have never had anything containing avocados. No guacamole, yummy salads or whatever else you make with those green things. I know! I understand you might be in complete shock and quite possibly are reexamining this internet relationship thingy we’ve got going on here.

I honestly don’t know what took me so long. Salads and veggies are one of my favorite things, but for reasons that are even a mystery to me, I just couldn’t get myself to try avocados.

And then my SIL, Rachel, came over and took me to Chipotle (also my first time). We ended up sharing a bowl and there was no escaping the guacamole train.

Chocoholic Chocolate Chunk Cookies

 Sharing my very favorite Chocolate Chunk Cookie recipe and a few of my secret tips on how to make perfect cookies every time.

I may or may not have been holding out on you with these cookies. You see, I bake these only every so often because I cannot stand being around them until I have devoured every last one. Even taking a couple of pictures is asking a lot once they come out of the oven :).

There are so many chocolate chip cookie recipes out there, but if you still haven’t found the one or are in the mood of switching things up, this is the recipe for you. It’s the one that has stolen my heart and it might just capture yours as well.

When it comes to baked goods, nothing beats a freshly baked cookie for me. I would be one happy camper if I could only live on cookies for the rest of my life. I just love them so. And to make matters worse, Adam is a huge cookie monster as well, which means we pretty much always have cookies hiding somewhere.

Blackberry Sage Lemonade Sparklers

 Oh yeah. We are making sparkly lemonade today. Using beautiful blackberries and one of my favorite herbs – Sage. Can you say refreshingly delicious!?

This week was full of rainy days and some huge storms. I can’t even count how many times I was woken up by thunder, lightning or both these last couple of days. The hubby told me yesterday morning that I’ve been shushing the storms during my sleep with an old, grumpy voice that he didn’t know existed. I’m a pretty calm sleeper and usually I am the one putting up with Adam’s interesting sleeping behavior, but I guess stormy weather brings out my dark side – lol.

It’s been crazy, but I secretly love watching another storm roll in and completely change the sky. It’s so awe-inspiring and beautiful. I could watch it over and over again.

The humidity levels have been out of control as well and while everyone is complaining about the sticky air, I am doing my happy dance. Because Blackberry Sage Sparklers are waiting in my fridge and they taste best when enjoyed on a hot, muggy day. [Read more…]
