Is there anything better than a big bowl of ice cream? How about Homemade Ice Cream on a Friday night? Quite possibly the best thing ever.

Since July is National Ice Cream Month, I really wanted to share my very favorite recipe with you. It’s been around forever and ever. This ice cream is hard to beat, in fact, I have yet to taste one that satisfies and tastes better than this easy peasy frozen wonderfulness. It’s that good!

What’s your favorite ice cream flavor? Mine is obviously Mint Chocolate Chip. Always has been and probably always will be. Whatever your favorite may be, you can most likely recreate your own, using this recipe as a base.

Back in the day (before Adam developed lactose intolerance), we would practically live on this ice cream. I made an uncountable number of different flavors and seriously had the best time experimenting in the kitchen. [Read more…]

Extreme Crunch Cinnamon Caramel Corn

Caramel Corn infused with cinnamon and tossed with 5 different types of nuts. Let the crunching begin!

Caramel Corn. What’s the first thing that comes to mind when you hear those words? Summer’s on the top of my list. I don’t know why, but every time we visit a fair, especially the MN State Fair, caramel corn or kettle corn spreads its wonderful aroma across the streets for my nose to find. I usually try to avoid buying any because I hate being stuck with a ginormous bag that I can’t stop eating out of for the rest of our time there.

Plus, I need two free hands to hold the bucket of warm chocolate chip cookies, the best grilled pork chops and whatever else on-a-stick I can find. Can you tell I am getting ready to visit the great MN get-together? Unfortunately, it’s still over a month until we get to go, but it’s never too early to start planning and dreaming about the food we’re going to devour.

So I am getting started by making my own caramel corn, which means I can stay hands free and indulge in caramel corn any time I want! [Read more…]

Let’s make Mondays better, shall we?

Starting off with one of the best muffins I ever, ever, ever made. And muffins are always the right answer when it comes to creating fabulous mornings.

How could one be anything but excited when welcomed with an amazingly loaded muffin – peaches, a sugary & slightly crunchy topping, and a finger-lickin’ glaze. You’re welcome.

Before I tell you more about these muffins, can we just take a second to ooh and aah about peaches? Peaches are at their absolute peak right now. I am totally and completely hooked. A perfectly ripe peach with all its juicy and sweet wonderfulness is hard to beat. My favorite summer fruit by far.

I am so smitten that I actually started to dream about pastries filled with that delectable fruit, which is precisely why I am sharing these Glazed Sweet Roll Peach Crumble Muffins with you today.

I hope you have a thing for peaches ;). [Read more…]

No-Bake Lime Cheesecake Parfaits

Hey guys! Friday’s here, the weekend is imminent and it’s time to take things easy. That’s exactly what I was thinking about when I came up with this dessert. I wanted something that could be thrown together in no time, but didn’t sacrifice in yumminess or flavor.

Also, I had about 12 limes in our fridge that needed to be used up :). Aren’t limes the best? I substitute limes for lemons whenever I can. I love that limes don’t have any seeds to worry about and could never get enough of the wonderful taste. With that being said, you could total use lemons if you’re not feeling the lime.

Am I the only one who thinks July and therefore summer is going by way too fast?! I am not even close to being ready to think about anything but sun and sunshine. So let’s move on and talk about the topic at hand. Chocolate & PB Brownies.

This recipe was on the back burner for quite some time. I had an inkling that being around these brownies would be more than I can handle. And boy, oh boy, were my suspicions confirmed.

I’m blaming it totally and completely on Reese’s Peanut Butter Oreos aka The Bestest Invention There Ever Was. I am sorta hoping that the limited edition is here to stay. Who isn’t?!

You didn’t think that I would stop at S’moreos, did you? Yeah, you know me. So here’s one of the most epic brownies that almost made it out of our kitchen :). [Read more…]
