Hi Everyone!

I hope you had a fun and relaxing weekend. We have had the most beautiful weather over the last couple of days. Combined with the gorgeous colors of fall everywhere, it was a hard one to beat. It just feels a little weird that it’s getting dark out so early now. The sun seems to be setting anytime between 5:30 and 6 at night, which has caused my hubby and I to long for bed as soon as it hits 8 o’clock, ha. Daylight savings time can’t come soon enough ;).

The other night I did manage to stay up later since I was working on these bars though. It’s not that they take a long time to make, but the idea for these jumped into my head out of nowhere.

And sometimes I just can’t wait to give something a whirl. Guess what I was dreaming of that night?

That’s right. I couldn’t wait to get up and taste these incredible Cranberry Bars the next day! [Read more…]

Croissants.

Croissants completely made from scratch. Worth every minute.

croissants

Guys, I don’t even know where to begin.

I made croissants and I can’t get over it. Even though this happened a couple of days ago, I am still on cloud nine. These beautiful pastries came out of my kitchen and actually looked, tasted and smelled like the real thing. It’s a good thing I have proof in form of these pictures or I wouldn’t even believe this is real life. I could have sworn I walked into a bakery the minute these pastries started to get all golden and crisp.

Is there anything better than butter? So, so, so much butter.

I don’t even care if this sounds cliché or that I might be a bit biased, but homemade croissants… there is nothing like it.

And yes, you can do it too. If I can whip up these delicate, light and melt-in-your-mouth pastries, you’ve got nothing to worry about! [Read more…]

The Fudgiest Chocolate Cookies

Meet The Fudgiest Chocolate Cookies I ever bit into. A creation courtesy of the famous Sarabeth’s Bakery.

Welcome to another episode of cookies Kathi can’t get enough of. Also, chocolate. So much chocolate. I am pretty sure I’ve posted more recipes for full-on chocolate cookies than any other kind. What can I say? I am a chocolate girl all the way. Especially when it comes to cookies. The more chocolate a cookie can hold, the better.

One would think that after trying and falling head over heels for one recipe, there couldn’t possibly be the need for more. Not if you’re a food blogger and self-proclaimed cookieholic. The search never ends.

I don’t ever want it to. Recipes, especially when it comes to baking, are to me like that pair of shoes you didn’t really need, but you’re so glad you bought anyways. And now wear them all the time. They may even become your favorite pair.

That’s exactly what’s happened with my newest cookie find. [Read more…]

Autumn’s Delight Chocolate Dipped Profiteroles

Profiteroles dunked in Chocolate and filled with classic fall flavors –  Sweetened Apples, Salted Caramel Sauce and a Homemade Whipped Cream Filling.

Autumn's Delight Chocolate Dipped Profiteroles

In order to keep the title somewhat manageable and short, I decided to go with Autumn’s delight as part of the name for this recipe. I think most people would agree that apples and caramel are fall’s most iconic combo.

And because apples never tasted as good as they do right now, they are definitely starring in today’s post. Nestled on top of a sweet whipped cream filling and drizzled with made from scratch salted caramel sauce, they are responsible for making all of the other components sing. La-la-la-la-la!

Autumn's Delight Chocolate Dipped Profiteroles

All this wonderfulness hides inside profiteroles or more commonly known as cream puffs.

Light and delicate pastries that I never thought I could pull off. If you’re anything like me, I am here to tell you that there is nothing to worry about. EVRYONE will be able to master these.

Seriously. [Read more…]
