Chocolate Cookies inspired by my most loved candy bar – Take 5.

Things are getting real. Thanksgiving is almost here and I’m preparing by munching on some fabulous cookies. Because no matter how busy things get, there’s always time to take a cookie break. And no holiday would be complete without them.

Right now I am just trying to soak in the excitement before the big day. Since the “eves” of holidays are one of my favorite parts of any special occasion, I already woke up giddy this morning.

One more night and I’ll be able to eat all the stuffing I possibly can. That’s right I am all about that stuffing. What about you? What are you looking forward to the most?

But in the meantime, I’m keeping myself occupied with these cookies. Because if we’re really being honest, nothing beats an amazing cookie. Especially stuffed with caramel, chocolate chunks, pretzel pieces and peanut butter chips.

I am guessing it’s appropriate to say Happy Monday! Given the fact that most of us are working only a short week and that the long weekend is already in sight. As if that wasn’t enough, we’re also on the brink of devouring one of the best meals the year has to offer.

Thanksgiving is great that way. Having full hearts and happy bellies. One of the best holidays for sure.

Chocolate Chip Cookie Cheesecake Bars

Another week has flown by. I think it’s because I’m getting so excited for the holidays and have started to make lists, plans and am already bursting with joy. Yesterday I found out that Minneapolis has a holiday market. I hear it’s similar to Chicago’s Christkindlmarket. It looks like so much fun and I cannot wait for it to open. Their website describes it as a magical setting showcasing delicious food, handmade goods and lots of fun. It’s completely outdoors and the vendors are all in decorated wooden huts. I know what we’ll be doing on Thanksgiving weekend :).

Caramel Pretzel Bites with a Cream Cheese Dipping Sauce

 Pretzels in bite-size form. Not only is caramel melted into the dough but these bites are also bursting with lots of ooey gooey caramel pieces. And don’t forget about the cream cheese dipping sauce – Mmmm!

Apparently there’s caramel on my mind this week. And yummy carbs, but that’s not really news to anyone, is it? When I set out to make today’s recipe, the wind chill outside was somewhere below zero. Don’t even ask me for exact temperatures. Once we go below zero, I stop keeping track. All I know is that it’s pretty darn cold outside and the best thing for me to do is to stay warm, sip on a cup of tea and do what I do best.

Baking treats that will make you forget about any and everything around you. Even frigid temps. I am speaking from experience, guys.

I am having some serious feelings about these tiny bites. Aside from their cuteness, which I can hardly get over, they’re also winning in taste, flavor and every other category a single food item could possibly win.

Salted Caramel & Chocolate Filled Thumbprint Cookies

Thumbprint Cookies filled with Salted Caramel and Chocolate. These are some yummy little bites!

And so another fun weekend comes to an end. Between spending most of our time with friends and family all weekend long (it doesn’t get much better than that), my hubby found a couple of hours to put up our Christmas lights outside. We usually try to get that checked off of our list before the first snow fall, but weren’t quick enough this time around. Yep, it happened. Earlier last week we received quite a few inches of the white stuff and our surroundings looked and felt like a winter wonderland.

So naturally I couldn’t help but listen to Christmas tunes all week long. Can you blame me?! Saturday morning was no exception. And while my husband was installing our lights, the noise he made reminded me and our kitties of someone else who likes to make a serious clatter on roofs towards the end of December… and out of the sudden I felt the need to whip up a batch of cookies.
