It’s Friday – Hooray! I realize that the Super Bowl is right around the corner and you might have anything but healthy breakfasts on your mind right now. Just bear with me. I feel the same way and cannot wait to dig in and eat all the chips and dip I can get my hands on come Sunday night. But first things first. As long as healthy translates to dessert, I can talk about it all day long no matter what.

And I secretly cannot stop saying acai and am taking every opportunity I possibly can to repeat it over and over again. I think Adam is quite happy that this post is going up today, so that I can finally stop talking about it… whenever I get super excited to share something with all of you, but have to wait a couple of days to do so, I kinda obsess over it. I doubt that’ll change after today, but getting it off my food brain feels real good.

Jelly Filled Donut Holes

With the end of January drawing near, I thought that I would miss my chance to indulge in some type of Jelly Donut. Last year I made you these. And I am so glad I was able to squeeze in some time to give donut holes a go and continue my January tradition of all things donuts and jelly. Alright, alright, I didn’t really have to make time. I actually happily ran into the kitchen and started to whip up the dough – nothing gets me going like the promise of fresh, still warm inside, and perfectly poppable donut holes.

Just when I thought things couldn’t get better in the donut department, these cute-as-a-button bites, proved otherwise. Of course I’d heard of donut holes before. But every time I go to get a donut at a bakery where donut holes are sold, I didn’t think twice about ordering the minis. Why bother with the small stuff when you can indulge into a big, beautiful donut instead?

Hi guys! I hope all of you had the loveliest of weekends. This time of year is calling me into the kitchen. I can’t help but be drawn to my oven (or freezer in this case) and play with new recipes. Most of which have been turning out quite well. Except for those Dark Chocolate Pomegranate Bars I made last week. They basically looked like coal in the shape of tiny bricks and the taste was less than desirable. A single bite is all it took to knowing that something went terribly wrong. And don’t even get me started on the texture. No, just no. One of these days I’ll hopefully be able to redeem them, but for now I’d like to forget about my big baking disaster.

So I turned to my freezer instead. I was looking for redemption. Sweet, sweet redemption. Though in serious doubt that my second healthier recipe of the day featuring some unusual ingredients would give me what I was looking for, I decided to give it a whirl anyway.

Happy Friday! So I guess today’s post should be entitled can’t stop won’t stop. Because my breakfast obsession is still going strong and so is my love for blueberries. You probably guessed by now that blueberries are my fruit of choice when it comes to the early hours of the day. Whether in yogurt, stirred into overnight oatmeal, or completely on their own, I could snack on them all day every day.

But the best way to enjoy those juicy & sweet little things is in the form of muffins, if ask me. Hands down.
