And so they strike again. No matter what, I can’t escape Girl Scout Cookies. Actually, I can’t escape the thought of them. I’ve been steering clear of the cute little girls and all of the Facebook posts posted by their parents to boost their sales. Because I know better. That box or two would disappear in a matter of minutes and start a delicious cycle I can’t give in to right now. I am fully aware that summer is just around the corner, which means it’s time to put down the cookies and start hitting the trails.

But wait! You might be thinking that you’re not looking at diet-friendly food right now. And you would be correct. I’m fully aware. This one’s for my motivation. I run and lead a mostly healthy lifestyle, so that when the mood strikes, I know just where to turn. I’ve said it before and I say it again, I am all about moderation and never depriving myself. Because if I do, I know that my next opportunity of treating myself will move into binging. So I’m always allowing room for a little something sweet and today’s treat hits just the spot! Happy Monday, friends! Our outdoor adventures turned into full on spring cleaning over the weekend. Both of us were exhausted by the end of Sunday, but it was well worth it. As long as the weather is nice, I don’t even care what we’re up to. After being cooped up inside for quite some time while winter lasted, I find it funny how excited we were to sweep the garage or take down our outdoor Christmas lights, ha! Hopefully we’ll continue to feel that way once weekly lawn mowing duties come around too… Even though I was running low on energy, I still had enough strength to whip up something delicious in our tiny little kitchen.

The result was anything but small. If you’re deciding to give this a go, you are in for an utterly satisfying, rich and decadent treat. Though it requires a little bit of work and patience, it is well worth it in the end.

It’s time for the weekend, everyone! Do you have anything fun planned? I think we’re ready to soak in the beautiful weather and let the sun do its magic. It sure is nice to feel the warmth and see the ground again (even though there’s not much to look at except for dead grass, ha). In preparation for our outdoor adventures this weekend, I started to get all sorts of ideas for snacks on the go that are wholesome and keep you fueled for physical exercise.

Dreaming about breakfast and pizza in anticipation of the weekend. It’s the right thing to do on a Wednesday, really. Although, once you learn how easy it is to make this breakfast wonder, you might not want to wait until Saturday morning to give this a go. I mean easy when I say easiest ever. There’s no yeast, waiting, proofing or anything else that’s usually involved with making pizza from scratch.

My mind was totally blown when I prepared this pizza on a whim and am so ready to finally share.

I’ve been eating eggs for breakfast and lunch like it’s my job lately. I’ll take them in any way, shape or form. Usually on top of a piece of whole grain bread with turkey, spinach and any other vegetables we’ve got hiding in our fridge.

I am not exaggerating on the frequency of my egg consumption. Whenever I find something I really love, I usually make it over and over again until I can’t stand it anymore. The same goes for songs. Playing it on repeat for a couple weeks straight until I can’t listen to it one more time. I hope that’s not just me…

Spring is in the air! I hope you’re experiencing the same heat wave wherever you are. I am finally excited to peek at the weather forecast once again. With highs in the mid 50’s all week long and having more daylight at night, we can’t wait to get back to our evening walks. It’s amazing what a huge difference warmer temps and a little bit more sunshine can make. It’s the simple things that bring me the most happiness.

Also, lemons. I’ve been stocking up on way too many lately. While citrus season was in full swing, I couldn’t help but buy all the lemons, limes, grapefruits and anything else citrusy I could get my hands on. Freshly squeezed lime juice over a salad is the best and so are roasted chickens stuffed with amazing lemons. I’ve also gotten into the habit of eating a ruby red grapefruit in the morning and enjoying a hot cup of water with even more lemon juice… yup, citrus fruits are having quite the moment.
