Oh my! Can we take a second and talk about how awesome almond butter is? I realize that I might be the last food blogger/person on earth who had never tried it before. I am happy to report that my curiosity finally got the best of me and I bought a jar just a couple of days ago. The verdict – it’s completely empty.

A classic case of I didn’t know what I was missing, but I’m so glad I finally discovered it. Better late than never, for sure!

Happy Monday to you. I hope you’re in the mood for something salty, sweet, chocolaty and oh-so decadent. Yup, we’re continuing the love for all things caramel that started (once again) last Friday and also continuing on with the theme of preparing things I’ve never made before. The success of my first ever cupcakes posted on the blog, certainly gave me enough confidence to try my hand at other desserts that have been swirling around in my head, aka Tarts. So, as I set out to purchase a tart pan and inevitably stumbled upon mini versions, I basically bolted out of the store and headed straight for the kitchen. Inspiration struck at lightening speed. Caramel! Chocolate! Pretzels! Mini Tarts! Sooo much excitement.

I was totally up for the challenge of making everything from scratch, but to be honest, I was mostly just hoping that my tart experiment would be successful in the flavor and taste department. Thinking about combining 3 of my favorite things into one epic dessert, basically had me drooling during the ride home.

Here I was thinking that I don’t do pretty swirls on cupcakes. Have you noticed the absence of cupcakes on this blog of mine? Yes? Because I did too. Pretty sure I waited for the right moment, flavor and enough courage to try to pipe frosting beautifully on top of each mini cake. Most of you know by now that patience is not my strong suit. Making the frosting or buttercream is one thing, but I was seriously dreading the process that inevitably would follow next. The fact that I’d never tried my hand at decorating cupcakes this way before didn’t help either.

PB and Jelly Bars

We’re bringing Peanut Butter and Jelly back. At least in the Deliciously Yum Home. I can’t remember the last time I had a pb & jelly sandwich. Probably sometime back in High School. I have no idea why, but my husband decided to break out the peanut butter and jelly jars and devour one sandwich after the other over the last week or so. And I immediately took inspiration, of course.

We’re basically looking at cookie bars. The crust and crumbly topping resemble a chewy peanut butter oatmeal cookie. With a generous layer of strawberry preserves in the middle.

Happy Monday morning, everyone! If I don’t jump right in, I might just explode. Because I’ve been dreaming of and cooking up a storm like it’s my job. Well, it sort of is. The weird thing is that I’ve been making the same thing over and over again. It’s so unlike me to stick with the same recipe and see how many different ways I can incorporate it into our lives.

There are just a few dishes that I tend to make on the regular, but most of what I prepare for dinner involves new recipes and serving up whatever my fellow food bloggers are sharing. I love change and am always trying out something new. At least when it comes to food.

But THIS SAUCE. I can’t seem to get over it.

Lightened Up Fettuccine Alfredo

There have been several attempts at recreating some of my husband’s favorite dishes ever since finding out that lactose just isn’t his best friend. Luckily, there are many substitutions that work extremely well when it comes to emulating butter, yogurt and cheese. Or so we keep telling ourselves, ha. Yes, most of the time (with exceptions to baking and chocolate) I stand in solidarity with Adam and consume far less dairy than I used to. Which means my non-lactose game has to be on point or I couldn’t do it.

But I thought I’d challenge myself and try to come up with a creamy dish that not only wins in the non-dairy department, but also brings true nutritional value and health benefits to the table.
