Cruising right on threw April. I know Minnesotans like to talk about weather and I’m certainly no exception. The fact that the days have been absolutely beautiful lately deserves special recognition. It’s amazing what a difference 70 degree weather can make. It feels incredible to be able to soak up those rays and enjoy true Spring weather. While I love, love, love the heat, I am pretty content for now. We get to go on walks, see pretty flowers everywhere and don’t need to turn on the heat anymore or air conditioning just yet. Plus, I still can’t wait to crank up the oven and bake away.

Once again I was feeling fruity and had to incorporate one of the yummiest berries, blueberries, into one of my baked goods. I happen to think that blueberries and brown butter make for the perfect match. There’s just something about that nutty flavor coupled with the warm, juicy and naturally sweet goodness blueberries have to offer.

Because it truly feels like Spring around here, which means we’ll be spending as much time as possible outside in the next couple of months, I’ve been thinking about desserts that are perfect to prepare for warmer weather.

My longing for a bonfire and sitting outside long after it’s gotten dark, might also have something to do with today’s sweet treat. Nothing says warm weather more than s’mores. Crunchy graham crackers, gooey marshmallows, and melted chocolate. One of the best inventions ever, for sure.

I have been waiting on pins and needles for this Monday morning. Because I can never wait to talk about cookies and have a new (to me) cookie creation to share with all of you. Starting off the week with a double cookie wonderfulness is the best way to head into Monday. I hope you like super chocolaty cookies and are a cookie dough fan. Today you don’t have to choose between the two – you can satisfy all your cookie cravings with one amazing cookie. Does it get much better than that?

When I dreamed about this cookie recipe, I didn’t have the slightest idea if my vision could become reality. I mean, enveloping cookie dough with more cookie dough? Wouldn’t it just bake like a regular cookie? I was going for actual cookie dough in the inside of the baked chocolate cookie. I figured that either way I couldn’t lose though. If it worked, I’d probably have one of the best cookies I’ve ever made on my hands, and if it didn’t work out, I’d still be left with a fabulous “black and white” cookie.

We’ve made it. Friday’s here and the weekend is only a few short hours away. I thought I’d take it upon myself to plan tomorrow’s breakfast/brunch for you. If you love scones, strawberries and a luscious sweet glaze, that is. Ever since perfecting my scone recipe a few weeks back, I knew I needed to explore further options and see where I could take the recipe. After being thrilled to see fresh strawberries all over my local grocery store at the beginning of the week, I immediately took inspiration and started to dream about soft, buttery and amazingly mouthwatering scones. Filled with lots and lots of strawberries.

I guess Spring is all about fruit for me, especially berries. It’s been extremely dreary out with lots of rain pretty much all of this week. The bright pops of color cheer me up and remind me that sunshine and brighter days are ahead… or at least I hope they are. And don’t even get me started on the glaze I whipped up for the scones. So many happy feelings.
