Homemade Chocolate Pudding is one of the best comfort foods. Here’s how you can make your own in just a few minutes!
I know it’s summer and all, which means we’re all craving refreshing drinks, lighter meals, and love to use the grill as much as possible. Am I right? But no matter what season we’re in, I still find myself wanting comfort food every now and again. Chocolate pudding definitely qualifies as comfort food for me. Just the thought of it brings back so many memories of my childhood and stirs up just as many happy feelings. I really don’t make it often enough.
It turns out that having chocolate pudding on an 80 degree day on your back porch is actually quite perfect. Chilled pudding with a super smooth and creamy texture is now one of my favorite summer treats. I had no idea how much I’d enjoy a treat I usually only make come fall or winter. Better late than never.
Shortbread Cookies filled with Chocolate and Marshmallow Crème. The perfect sandwich if you ask me.
If you do one thing this upcoming weekend, try to make your own version of S’mores Sandwich Cookies and celebrate the fact that summer is right around the corner/has already arrived. Our MN weather can’t seem to make up its mind. One day we have lots and lots of rain with highs in the mid 60’s and the next day we’re hitting 80 degrees. So yeah, we’re basically taking in a wet spring while basking in summer’s sunshine all at the same time. Will you please make up your mind, weather? At least we’re heading into the right direction.
While I’m waiting, I’m all about making sandwich cookies with the classic s’mores flavors. A crunchy cookie, satisfying chocolate and ooey goey roasted marshmallows.
Helloooo my new favorite summer treat. Just wait – once you taste ’em for yourself, you won’t be able to resist the urge for some s’more! Continue reading →
These squares embody summer in a dessert. Scrumptious Cake layered with Fresh Rhubarb and finished with an Extra Crunchy Crumb Topping.

Thanks for spending part of your holiday weekend with me. I hope you’re having the best Memorial Day so far, surrounded by friends and family, being thankful and grateful, relaxing and enjoying some excellent food. I also hope you’ve saved some room and are completely ready to whip up one of the tastiest summer desserts I’ve made up to date. I’m not even kidding or exaggerating.
I never knew that I could develop such a love for rhubarb. To be honest, before making today’s squares, I wasn’t particularly interested in said vegetable and may have avoided trying it for the past quarter of a century that is my life.
But after a ginormous rhubarb plant (we inherited) started to stare at me every single day since moving house just a couple of weeks ago, I simply couldn’t ignore it any longer. So I asked Adam (since it was pouring outside) to brave the weather for me, harvest our rhubarb, and that I would make him a delicious dessert in return. Since we had a deal, I knew I needed to deliver. Neither of us had any suspicion that we’d spend the next couple of hours inhaling one rhubarb square after the other. Continue reading →
Super moist and fluffy Buttermilk Pancakes trying to imitate Oatmeal Chocolate Chip Cookies. And it’s working!
Happy Friday, friends! Today we’re returning to one of my very favorite topics – breakfast. I don’t think I’ll ever tire of talking about how my relationship with breakfast has changed since starting this blog. Whether healthy and energizing or straight up indulgent, after almost 2 years, I seriously love it all.
So what’s the first thing you think of when you hear the word breakfast? Pancakes is always the first thing that pops into my head. Seven years ago when Adam and I were newly married, I had absolutely no idea how to cook a meal yet alone bake cookies. The day I mastered pancakes with the help of Bisquick was a wonderful one.
We probably had pancakes several times a week for quite a while. And it certainly didn’t matter if it was breakfast, lunch, or dinner time. It still doesn’t. Both of us love breakfast foods for any given meal, especially pancakes. But we’ve since graduated from the prepared mix and moved on to truly homemade ones, which is the best kind one can enjoy.
I mean, Oatmeal Chocolate Chip Cookie Pancakes!!! How can you not want these all day long?! Continue reading →
Brownie Dessert Pizza spread with a Homemade Cream Cheese Frosting and some of our Favorite Fruits!
There’s nothing like fresh fruit in the summertime. The amount we’ve been consuming lately is slowly getting out of control. With no end in sight since the best of summer’s produce is yet to come. With Memorial Day right around the corner, I really wanted to make a fun dessert that showcased my love for chocolate and fruit once again. Plus, it’s been a hot minute since my last brownie dessert.
If you’re a fan of dessert pizza, then you will certainly love this version. The idea for pizza in dessert form came to me last weekend on our Kansas trip. We’d stopped at Pizza Ranch to enjoy a quick meal with family. If you’ve been there before, you know that one of the highlights is their dessert pizza. Now, they don’t offer the brownie and fruit version you see here, but as I sat their devouring my two slices of their “Cactus Bread”, I secretly was craving something with a bit more chocolate and chewiness.
