Coconut Oil Banana Muffins

Coconut Oil, Sweetened Coconut Flakes, and Bananas make for an amazing breakfast treat. Mmmmm!

Coconut Oil Banana Muffins

Raise your hand if banana bread is as much of a kryptonite food for you as it is for me. Banana bread and I go way back, which is exactly why The Best Banana Bread Recipe was posted in the very early days of this blog. It was one of those recipes that I couldn’t wait to post for all of you to see. Because it’s that good. It yields two medium-sized loaves that always disappear before I can even utter the words: “I just baked banana bread”.

So when a couple of overripe bananas couldn’t be ignored much longer the other day, I didn’t have a choice but to pull out the old banana bread recipe. And somewhere along the lines I started to play with coconut oil, coconut flakes and the idea of making muffins instead.

These muffins are just another reason why I love baking and getting creative in the kitchen. Continue reading

Carrot Cake Pops

Carrot Cake, Cream Cheese and White Chocolate create a delicious bite that you won’t be able to stop popping into your mouth!

Carrot Cake Pops

Here’s something I never thought I’d say. I am craving fall flavors while still trying to soak in every last day we have left of summer. Don’t get me wrong. I don’t actually want fall to arrive just yet. The change in temperature, shorter days, and all that jazz can stay away forever (as far as I’m concerned).

I just want to have permission to break out the pumpkin, warm spices and drink mulled apple cider. But I am trying to hold off. I’m sure I’ll be changing my tune next week though. When all I want to do is to hold on to summer’s goodness and abundance with both of my hands. For as long as I possibly can.

Carrot Cake Pops

Still wanted to break out the cinnamon and a couple of other spices. Which is where carrot cake comes into play. I don’t think there’s a rule as to when one can whip up a wonderful carrot cake. It’s a cake I am happy to enjoy all year around and it is my way of getting some of those fall cravings taken care of.

Carrot cake aroma must be one of the most warming, welcoming, and heartwarming smells around. And it only gets better once formed into tiny bites. YUM! Continue reading

Trashed Up Pretzel Donuts

Homemade Pretzel Donuts dipped in a rich Chocolate Glaze and finished with pretzels, sprinkles, and anything else I could find.

Trashed Up Pretzel Donuts

Trashed-up desserts are a thing and always have been. It’s what happens when you make something utterly delicious but then can’t stop adding a whole bunch of other yummy ingredients to set it over the top. And it totally works. It’s a sweet treat you feel somewhat guilty indulging in, but you can’t and don’t really want to stop.

And to be totally honest, these are the kind of recipes that I love sharing with you the most. I am ridiculously giddy and excited about this one.

Trashed Up Pretzel Donuts

First of all, any day on which I get to talk about donuts can’t turn out to be anything but fabulous. Secondly, I combined my favorite treat of all time, donuts, with a savory favorite, pretzels, and am now able to enjoy both of them at the same time. I know! Even though it took me quite a few years to think of this combo, I am so, so overjoyed that I finally did.

Pretzel Donuts forevermore! Continue reading

Very Berry Smoothie Breakfast Cookies

Classic smoothie ingredients make up these scrumptious Breakfast Cookies. Complete with blueberries, raspberries, granola and almond butter. Yum!

Very Berry Smoothie Breakfast Cookies

There’s a different story to every recipe I post. Some are family favorites waiting for future generations to be enjoyed, others are inventions I literally dreamed up over night, and a few happen to be complete accidents. Thus is the case with today’s cookie recipe. What should have been a quick and simple breakfast turned into experimenting and eventually resulted in me stuffing my face with cookies first thing in the morning. Happy accidents like this one is what I consider winning.

Very Berry Smoothie Breakfast Cookies

But it is no accident that you find my very favorite foods that I reach for on a regular basis in these cookies. Blueberries and raspberries have and probably always will be my go-to berries of all time. There’s yogurt in place of eggs & butter. I even substituted some of the flour with extra crunchy granola. And to my surprise, it totally worked. I couldn’t get the cookies into my belly fast enough. Continue reading

Cheesecake Fig Slice

One of our favorite good-for-you desserts. Juicy figs, a silky cream cheese layer, and a nutty base. You’d never guess this is healthy even in the slightest!

Cheesecake Fig Slice

If you’d asked me two years ago if I would ever make a recipe using figs, you would have heard a resounding no from me. I was beyond intimidated by this gorgeous fruit. Even though they’re pretty to look at and have intrigue written all over them, I couldn’t bring myself to picking up a few. And then Costco happened on a Monday morning. Proudly displaying case upon case of the most gorgeous figs I’d ever laid eyes on. Just like that I grabbed a case, made my way to the register, and started this figgy relationship.

Things quickly got serious. I found myself going back for just one more all day long. I don’t even care to admit that I’m completely and totally addicted. And I suppose I have this little blog to thank for that. It’s the one thing that pushes me to try new things, invent new recipes, celebrate the classics, and keeps my life more interesting and exciting than I could have ever dreamed. Which also means that I have to thank you. Because none of this would happen or could be possible without you. Cheesy, but oh so true.

So I hope you indulge me for another couple of minutes as I share with you my new fig obsession. I have a feeling you’ll really like this one. Continue reading
