I’m pretty proud of myself this year. For holding off on fall baking until the unofficial start of the new season. Something that was beyond difficult for me last year and much easier this time around. The hot, hot temperatures and busyness of life towards the end of summer were definite contributors. I am so ready to bring on all things fall now. Though I am not looking forward to the cold days, I am excited for the beautiful colors, apple cider, cozy sweaters and lazy Sunday afternoons watching football… preferably while enjoying a slice or two of this delectable pumpkin bread.

Hey there! I hope you’re enjoying the last day of the long holiday weekend today. We have had the most wonderful weather so far. And by wonderful I mean hot, humid and sunny.

On Saturday, we braved the MN State Fair and tried everything on a stick you can possibly imagine. You’d think that since I am into everything baked and sweet, my favorite thing to eat at the fair would be a yummy treat, but it ain’t so. The one thing I look forward to the most are the pork chops on a stick. I am fully aware how that must sound, especially coming from me, but they simply can’t be beat. The smell of the chops grilling away, the special seasoning, and the way that they’re always cooked to perfection… it’s a carnivore’s dream, really.

Oreos have been having a real moment in our house. Ever since buying a package of the new thin oreos in New York last week, we cannot stop eating them. It used to be that Peanut Butter Oreos were my absolute favorite. Nobody else ever seemed to care for them, which I was more than happy about. I then fell head over heels for golden oreos and certainly couldn’t get enough of the peanut butter cup ones either. But the current obsession is all about the original kind. And they’re taking over the best thing in the entire world today – DONUTS. Yes, caps are required.

On Life Lately

I took an unplanned break. And I missed blogging way too much.

As the title of this posts indicates, I thought I’d fill you in on what we’ve been up to lately before resuming my regular posting schedule (M,W,F) starting this Friday. In the beginning of August, Adam and I went on the longest road trip either of us had ever been on. We decided to pack up our car and head all the way to Key West, FL. This was our first official vacation as a married couple after being married for well over 7 years. I know! To say that we were out-of-our-minds excited would be the understatement of the year. After spending just over 27 hours in the car, we arrived to the view you see above.

Raise your hand if banana bread is as much of a kryptonite food for you as it is for me. Banana bread and I go way back, which is exactly why The Best Banana Bread Recipe was posted in the very early days of this blog. It was one of those recipes that I couldn’t wait to post for all of you to see. Because it’s that good. It yields two medium-sized loaves that always disappear before I can even utter the words: “I just baked banana bread”.

So when a couple of overripe bananas couldn’t be ignored much longer the other day, I didn’t have a choice but to pull out the old banana bread recipe. And somewhere along the lines I started to play with coconut oil, coconut flakes and the idea of making muffins instead.
