I am giving in to fall baking. It’s happening and I couldn’t be more excited about it, especially if that means we get to eat things like what I am sharing with you today. My caramel-apple-cinnamon-roll-pie dreams are coming true. Finally. I have been thinking about some kind of a caramel apple cinnamon roll concoction forever now, which means probably 2-3 weeks for me, ha.

Seriously, thinking about the perfect way to pair those three completely occupied my mind. Once I had the idea, I tried to hold out on executing simply because I refused to get an early start on all things fall. You know how anticipation makes things almost always better, like so much better?! Well, I think that might have happened with this pie.

I doubt that it could taste anything but delicious, but after taking my first bite of this, I almost fell into a foodie coma. I am pretty sure my taste buds had no idea what was happening…. but they couldn’t get enough of this breakfast/dessert mash up.

And I haven’t even mentioned the best part yet. All you need are 3 easy ingredients. Three. Some lovely canned cinnamon rolls with icing, a couple of your favorite apples, and caramel bits.

If you’re been reading my blog for a little while, you most likely know by now that I absolutely love making things from scratch and rarely use anything store-bought in my recipes. But I gladly made another exception for this one. Since most families are busy with school and about 1000 other things, I wanted to share something that not only uses a few ingredients, but is also a cinch to prepare. This pie comes together in about 30 minutes and will probably be devoured in 30 seconds or less ;).

The assembly couldn’t be easier. You simply remove the cinnamon rolls from the packaging and using a rolling pin, roll them out until they’re flat enough to be rolled up into yummy little logs ;). You’ll place them in a circle into your pie dish and continue to make additional inner circles, ending with one last cinnamon roll-up in the middle of the pie. Next, you’ll slice two small apples and push them into the gaps between each cinnamon roll circle. Stuff a couple of caramel bits inside as well and that’s it.

Here’s a picture of the pie before it met the oven. The 15 minutes it took to bake were like torture. I may or may not have sat in front of the oven to saw it gain some color and rise to its full beauty. And the smell – don’t even get me started. You know what wonderful aroma fills your house when cinnamon rolls are baking away. Add some apples and caramel to the mix and I almost couldn’t stand it. Almost – there was no way I would miss the wonderful end result ;).

You’ve already seen the pics of the white glaze. And here we have the last and final step. After adding the regular glaze (aka the white icing that comes with the cinnamon rolls, which I heated in the microwave for a couple of seconds), I took some caramel sauce and added that to the second tub of icing (you’ll be using two cans of cinnamon rolls total) and turned it into a caramel glaze.

Now I realize that you can purchase caramel cinnamon rolls that already come with caramel icing, but my store didn’t have them the day I bought mine. If you can find them, feel free to buy one of each or whatever floats your boat. You could go all the way caramel or regular, but I like using one of each. The contrast of color and taste just does it for me.

Ingredients
  1. 2 tubes canned cinnamon rolls with icing (one regular and one caramel)
  2. 2 small apples, gala or honey crisp
  3. 1/2 cup caramel bits
  4. 1/4 cup caramel sauce, optional
Instructions
  1. Preheat oven to 400 degrees F.
  2. 1. Remove cinnamon rolls from the packaging and lightly flour your work surface. Using a rolling pin, roll out each cinnamon roll until flat enough to roll up, about double the original size. Place each cinnamon roll, seam side down, into a pie dish and form a circle. Add two additional circles (depending on your pie pan size), ending with one single cinnamon roll in the middle.
  3. 2. Peel and slice 2 small apples and push slices in between the gaps of each cinnamon roll circle. Stuff caramel bits evenly into the gaps as well, sprinkling a few on top. Place in the oven and bake for 14-17 minutes or until golden.
  4. 3. Meanwhile, spoon regular icing into a microwave-safe bowl and heat in the microwave for 10 seconds or until warm and slightly runny. Drizzle over the warm pie. Repeat with the caramel icing. If you can't find cinnamon rolls that come with caramel icing, simply combine the regular icing with 1/4 cup caramel sauce and heat in a microwave-safe bowl for 10 seconds as well. Stir to combine and drizzle over the top. Enjoy!

  1. I gasped when I saw this cinnamon roll pie, Kathi. What a GENIUS idea…and delicious! I love how you used premade dough here, too. Cinnamon rolls from scratch are something special, but sometimes a quick recipe is key. Especially when it’s jazzed up with caramel and apple!

    • ok its out! i really recomend cooocking it longer than even 17 mins. I took it out the first time at 16 and it was still doughy in the middle about seven more mins and itll be perfect its SO cook tastes like a big ncinnamin roll you wouldnt think it’d come out /just like a pie/ BUT IT DID
worth the try! everyone should try this at least once maybe use a more bitter apple too though?? gala is soooo subtle-sweet it gets washed by the icing. deff will make again for breakfast one sunday! with a side of bacon this is a winner!
