Caramel Stuffed Cider Cookies

I am such a sucker for all things containing caramel. Caramel seems to make everything better and more scrumptious. It surely enhances the taste of most treats and causes ultimate gooeyness, which is the icing on pretty much all delights. Buttery goodness and a luscious brown hue are irresistible. When I came across these cookies, not a single doubt remained in my mind that I had to give them a try. This is not your average cookie recipe – it contains a special ingredient which I will tell you about in a second. On this beautiful fall day (around these parts anyways), you deserve a cookie that will make your palate sing.


The filling is in no way superior to the cookie itself though. The dough is perfectly balanced and makes for a beautiful cookie; both inside and out :).

The unusual ingredient used in this recipe is apple cider powder. I was a bit skeptical adding 5 packets of cider drink mix to a batch of cookie dough and thought it would either be too sweet or different for my liking. But as I mentioned above, I was positively surprised by the ideal flavor profile of these cookies. I wouldn’t want to change a thing about them.


You will not regret mixing up a batch of these.


The best part is that you can enjoy a melted caramel cookie whenever you want. Simply pop the desired number of cookies into your microwave and nuke them for about 5-7 seconds. Gooey, warm cookies anytime (they taste delicious without warming them up first too).

  1. 1/2 cup unsalted butter, softened
  2. 1/2 cup sugar
  3. 1 egg
  4. 1/2 teaspoon vanilla
  5. 1/4 teaspoon salt
  6. 1/2 teaspoon cinnamon
  7. 1/2 teaspoon baking soda
  8. 1/4 teaspoon baking powder
  9. 1/2 box Alpine Spiced Apple Cider Instant Original Drink Mix (5 packets)
  10. 1 1/2 cups flour
  11. 1 bag of chewy caramels
  1. 1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. 2. In a stand mixer, combine the butter and sugar until creamed together. Add the egg and vanilla and combine. Next, mix in the salt, cinnamon, baking soda and powder until well incorporated. Add the 5 packets of Instant Apple Cider Mix one at a time and mix well. Finally, add the flour until dough forms (it will be slightly sticky and wet).
  3. 3. Using a cookie scoop or measuring 2 tablespoons of dough, form a ball and flatten slightly. Place one piece of the chewy caramels in the middle and enclose, using the dough around the piece of caramel.
  4. 4. Place 9 cookies in rows of 3 on your cookie sheet and put into oven. Bake them for 14 minutes or until the edges are slightly brown. Let cool on the cookie sheet before transferring them to a wire rack. Repeat with the rest of the dough.
