All I wanted were thick, moist, and drool-inducing bars that screamed fall to me. Pumpkin as one of the main ingredients was a must – no explanation needed. As I looked through the pantry my hand automatically reached out and grabbed the cookie butter jar. Once I opened the lid and smelled the wonderfulness that is cookie butter, I knew the flavors would work extremely well with pumpkin. I mean, cookie butter is basically made out of cookies and you can never ever go wrong with adding cookies to a dessert recipe. It’s a guaranteed winner!
The addition of semisweet chocolate chips, a yummy cream cheese drizzle, and extra cookie crumbs were always a given. There’s no such thing as a good pumpkin bar without cream cheese in one way or another. At least in my recipe book, ha.

Recently, I found myself digging through my baking pantry and discovered a container of chocolate covered espresso beans. Pretty sure I purchased those on a whim one day in Trader Joe’s and decided to hide them from myself. Burying the container amidst large bags of flour, sugar, and everything else you could possibly need to satisfy your baking addiction. Because I cannot be trusted around them.
You know that awesome feeling when you find something unexpectedly like a $10 bill in a pair of jeans you’ve forgotten about? That’s what I felt like after discovering my hidden chocolate espresso beans. Brookie Bars are the ultimate sweet treat. Combining chocolate chip cookies and brownies into one mouthwatering dessert.
The 4th of July is tomorrow, guys. I am sure y’all are more than aware and are looking forward to celebrating. Which is exactly why I’m breaking out a super indulgent dessert bar for all of us. I don’t care what season we’re in or what the weather is doing, chocolate chip cookies and/or brownies are always a good idea. Only made better by combining the two and ending up with one absolutely insane & utterly delicious mash up.
I’ve always had a deep love for mash ups, especially when it comes to sweet treats. Why settle for one when you can have 2 or 3 all at once? It has to be done well though. I don’t like to just throw a whole bunch of things together and hope that the flavors will complement each other and create an awesome bite.
When it comes to mash ups, I like to be able to recognize what I’m about to devour. Even though this is a compilation of sorts, keeping some separation and definition is still important. I hope you catch my drift… Brookies aren’t a new invention or anything. They’ve been around for quite some time and have clearly stood the test of time. Thanks for spending part of your holiday weekend with me. I hope you’re having the best Memorial Day so far, surrounded by friends and family, being thankful and grateful, relaxing and enjoying some excellent food. I also hope you’ve saved some room and are completely ready to whip up one of the tastiest summer desserts I’ve made up to date. I’m not even kidding or exaggerating.
I never knew that I could develop such a love for rhubarb. To be honest, before making today’s squares, I wasn’t particularly interested in said vegetable and may have avoided trying it for the past quarter of a century that is my life.
But after a ginormous rhubarb plant (we inherited) started to stare at me every single day since moving house just a couple of weeks ago, I simply couldn’t ignore it any longer. So I asked Adam (since it was pouring outside) to brave the weather for me, harvest our rhubarb, and that I would make him a delicious dessert in return.
