Caramel Pretzel Bites with a Cream Cheese Dipping Sauce

 Pretzels in bite-size form. Not only is caramel melted into the dough but these bites are also bursting with lots of ooey gooey caramel pieces. And don’t forget about the cream cheese dipping sauce – Mmmm!

Apparently there’s caramel on my mind this week. And yummy carbs, but that’s not really news to anyone, is it? When I set out to make today’s recipe, the wind chill outside was somewhere below zero. Don’t even ask me for exact temperatures. Once we go below zero, I stop keeping track. All I know is that it’s pretty darn cold outside and the best thing for me to do is to stay warm, sip on a cup of tea and do what I do best.

Baking treats that will make you forget about any and everything around you. Even frigid temps. I am speaking from experience, guys.

I am having some serious feelings about these tiny bites. Aside from their cuteness, which I can hardly get over, they’re also winning in taste, flavor and every other category a single food item could possibly win.

Before we talk about my new found love for these incredible Sticky Buns, we need to chat about something completely unrelated. Youtube channels. I’ve recently became aware of the fact that there are youtubers that treat their channels much like a blogger treats their blog, if that makes any sense. I was always aware that people post fun and useful stuff, but I had no idea of the community that existed. Alright, I won’t bore you any longer since you’re probably rolling your eyes at me wondering if I’m actually living under a rock or something.

Every night before my head hits the pillow for good, I am checking my favorite channels while always being on the lookout for new ones.

At this point, makeup channels are in for the win. I am obsessed with makeup (always have been) and now I’ve found channel after channel telling my what I’ve been missing out on and that doing your eye brows is super important. It does make a huge difference, btw.

Fall is definitely approaching. MN mornings are noticeably chillier now with beautifully warm afternoons. Change is in the air and I am finally starting to get used to the idea of cooler weather.

I am actually not dreading the fact that fall is well on its way, but the thought of winter that seems to be approaching quicker ever year, is something I’ve been avoiding. It’s motivated me to come up with a fun list of things to keep myself busy with once I won’t want to set a foot outside.

Hot Cross Buns

 Hot Cross Buns are an Easter tradition. With the sweetness of cinnamon sugar and raisins, these buns are irresistible.

With Easter almost exactly one week away, I thought today would be the perfect day to post these Hot Cross Buns. We’re getting together with one side of our family this weekend and these buns have family get-togethers written all over them. What’s not to love when it comes to freshly baked rolls?

Hot Cross Buns are usually eaten on Good Friday, which is definitely more than appropriate, but I love the idea of serving these on Palm or Easter Sunday as well. They are so pretty and would complete any brunch menu.

I have had my fair share of these buns over the years, but this was my first time making them myself.

I remember having these around during Easter as a kid and I always got so excited when I first saw them. Until I remembered that there were raisins inside. Let’s just say I was somewhat of a picky eater and never understood why in the world my Mom had to add raisins to something that would be so much better without them.

Good thing I left little Kathi’s palate behind and learned to embrace them after all. These buns just wouldn’t be the same without the fruity component. Extra chewiness and sweetness should not be passed up by anyone :). [Read more…]

Ever since making these homemade soft pretzels on Saturday, I have been looking forward to Monday like I haven’t in a while. When a recipe turns out as well as this one did, I just can’t wait to tell you all about it. So yeah, we had a pretty amazing weekend, which was mainly due to the discovery how to make one of our favorite snacks. Devouring a pretzel or two has been a staple almost every time we visit our mall. Never did I think that the same soft pretzels could be duplicated in the comfort of our own home.
