I know I keep saying I’m not a breakfast person, but I sure love breakfast foods. Making homemade crepes had been on my mind forever. Since the beginning of this year actually.

A couple months back when my husband and I went on our annual shopping trip to the Mall of America, we passed their little crepes shop that offers them in any and every way. They have the most amazing flavor combinations, but the Nutella Crepes caught my eye (I know. Big surprise). I was set on getting one until I got close enough to read the prizes on their menu.

After overcoming the sticker shock, I still wasn’t comfortable with spending 7 or 8 dollars on one crepe. But that didn’t mean that I was over crepes in general. Oh no. I knew homemade crepes were in our near future.

Hi! How was your weekend?

I thought I’d post this recipe today to savor the weekend a little bit longer. We had a jam-packed couple of days including tackling some projects around the house, squeezing in a couple of runs and going on a fun date together. Time sure seems to be flying by when the weather is improving and you can finally step outside without having to worry about frostbite or slipping on a piece of ice.

Late Friday night, I decided that we would be enjoying our much loved Blueberry French Toast the following morning. Never mind that it was getting kind of late since this breakfast casserole can be whipped up in mere minutes.

I didn’t really have any intentions of posting this recipe. Not because I didn’t want to share it, but this recipe has been around for so long now, that it simply didn’t occur to me to put it on the blog. Until I pulled out the recipe and realized that the original is nothing like the one I use now to make this casserole. It has undergone many changes over time, all of which were stashed in my memory. Hey, hey! How was your weekend? Over here, we are still trying to break into the 40’s and getting a grip on Spring. But the low temperatures didn’t keep me from putting away my winter coat and sporting my new Spring jacket instead. One thing I always crave during the warmer months of the year is fresh berries. I love, love, love them. No matter what kind, I could devour them all. Raspberries, however, hold a special place in my heart. My mother-in-law has the best raspberry bushes and every year, we get to pick as many as we like and besides eating as many as we possibly can, I always end up making jelly. Never did it cross my mind to freeze some fresh berries so I could make um, Raspberry Sweet Rolls, for example. It boggles my mind that I have failed in that department. Pancake Poppers

Pancake Poppers by Deliciously Yum!

It is no secret that pancakes are a favorite in our house. For breakfast, lunch or dinner. It’s one of my go to meals for meatless Monday, actually. My husband is more of a traditionalist when it comes to pancakes. He never requests any add-ins and is perfectly content with plain pancakes drenched in syrup, of course. He could eat the same thing every time.

One of the reasons why I started this blog, was so I’d have the ideal excuse to try out new recipes and let my creativity go wild. It’s one of my most beloved things when it comes to writing about food. So, it was only a matter of time before I’d get bored with flipping one pancake after another.  And shortly after, Pancake Poppers were born.

Breakfast foods have been high on my list lately. And that is a big deal for me. I’ve never been one who enjoys eating in the morning and usually wait to have a light snack at around 10 or so. I am anything but hungry in the early hours of the day and the most I usually go for is a warm cup of tea. That is not to say that I don’t love the food in and of itself though – just at a much later time. I’ve been dreaming up all sorts of breakfast concoctions and couldn’t wait to make these bright and cheery waffles.

I sort of love the rustic look of these. I used a regular waffle iron to make these, but instead of filling each square with enough batter to make a perfectly symmetrical waffle, I used less batter and was left with the cutest little things. Not only do they look adorable, but since they are smaller than your regular waffles, you get to enjoy a high stack of waffles paired with luscious butter and syrup. So good! [Read more…]
