Alright, Monday, let’s do this. When you don’t really want the week to start, you procrastinate by dwelling on that mind-blowing dessert you’ve made over the weekend. It includes being thankful for the invention of brownies, pondering the sweet yumminess of homemade frosting, reimagine the melted chocolate, and wishing you had another bag of those mint chocolates hiding in your cupboard. Because you’d do it all over again. In a heartbeat.
We all know those food combos that belong together like no other. From peanut butter and jelly to macaroni and cheese, and most importantly milk and cookies, most of us adore foods that love each other.
Another one of those combos has always been dark chocolate and mint for me. From the time I can remember, mint chocolate chip ice cream has been my go to. I also recall that my Grandma used to have bars of dark chocolate filled with a luscious mint cream ready for an after dinner treat when we came to visit her. Chocolate, mint and I go way back.

Brownie Dessert Pizza spread with a Homemade Cream Cheese Frosting and some of our Favorite Fruits!
There’s nothing like fresh fruit in the summertime. The amount we’ve been consuming lately is slowly getting out of control. With no end in sight since the best of summer’s produce is yet to come. With Memorial Day right around the corner, I really wanted to make a fun dessert that showcased my love for chocolate and fruit once again. Plus, it’s been a hot minute since my last brownie dessert.
If you’re a fan of dessert pizza, then you will certainly love this version. The idea for pizza in dessert form came to me last weekend on our Kansas trip. We’d stopped at Pizza Ranch to enjoy a quick meal with family. If you’ve been there before, you know that one of the highlights is their dessert pizza. Now, they don’t offer the brownie and fruit version you see here, but as I sat their devouring my two slices of their “Cactus Bread”, I secretly was craving something with a bit more chocolate and chewiness.

Welcome to a new week, friends! I can officially say that I’ve caught the Easter bug. That’s bug and not bunny, ha! After the weather started to decline over the last couple of weeks, I had a hard time getting into the mood. But I’m happy to report that I’m all in. It’s amazing what a couple of sprinkles, pastel Easter eggs and chocolate can do for you. Also, the temps are looking to be much, much warmer – just in time for an outdoor Easter egg hunt this coming weekend. I’m talking about the little cousins and not us, of course.
We actually started things off yesterday with our first family get together for Easter. Which was the perfect time to whip out a brownie recipe I had been working on for the last couple of weeks.
I know I have plenty of recipes featuring homemade brownies on this blog already, but the itch for perfection and my all-time favorite brownie recipe never went away. And I doubt that it ever will. Much like I can’t choose a favorite of all the cookie recipes I’ve developed and written about. I seriously love them all. It really just depends on what mood I’m in or craving at the moment. And right now I simply can’t get enough of super fudgy, extra chocolaty (triple chocolate) and unbelievably chewy brownies.

Happy, happy Friday! How was your week? Our home was struck by sickness this week. Ugh! Adam was down for most of the week with a stomach bug and I have been spared so far. I think I should be in the clear and am ready to enjoy a healthy and fun weekend with my man. If Fridays and getting better aren’t a great reason to celebrate, then I don’t know what is. And the best way to do so is with a big old pan of brownies. I am sure you agree.
I basically made my childhood dreams come true when I concocted the brownies you see here. Loaded with chocolate covered caramels, mini marshmallows and caramel popcorn. Oh, and there’s chocolate. Lots and lots of chocolate.
