Glazed Lemon Pudding Cake

Lemons have stolen my heart and I don’t care who knows it. I always have an abundance of lemons in my kitchen. I regularly drink a glass of water with half of a freshly squeezed lemon first thing in the morning. So I constantly stock up on lemons and sometimes happen to buy just a couple too many. Which I don’t mind at all ;). Because it results in delicious cakes like the one you see here.

I actually spotted the recipe for this cake a little while ago and have been waiting for just the right moment to whip it up. When the lemons started to accumulate, I took it as a sign and finally gave it a go.

You might know by now that I’m all about moist cakes. I can’t stand dry and flavorless cakes, which are two things this one does not have. The addition of pudding is basically the best thing ever. Every time I sneak another slice, I am dying just a little bit inside. I almost can’t handle the goodness. [Read more…]

Glazed Lemon Poke Cake

This post has been a long time coming. I don’t think I’ve ever struggled to bake/develop a recipe as much as I have with this one. Pretty sure I’ve been working on a lemon cake in loaf form ever since starting Deliciously Yum. I seriously thought it’d be one of those recipes I could whip up in no time and post on the same day. Well, almost 2 years and who knows how many failed attempts later, here it is.

And I couldn’t be happier with the outcome, you guys. If I didn’t think this ones the ONE, you wouldn’t be reading about it. I would have waited another 2 years if I knew this cake was the outcome.

Vegan Chocolate Covered Strawberry Cheesecakes

Welcome to another Monday! I hope you all had a wonderful weekend. Mine can basically be summed up by these pictures. Celebrating Mother’s Day was the main event, of course. After making these tarts a couple of weeks ago, I knew it wouldn’t be long before they’d make their appearance once again. Being inspired by individual desserts, the giant pack of Costco’s strawberries in my fridge, chocolate, and Friday’s smoothie, I knew exactly what to whip up for Sunday’s occasion.

I didn’t think I could go wrong with a scrumptious Oreo crust and a no-bake strawberry cheesecake filling. Because strawberries and chocolate make for a pretty delicious combo that just screams love to me. And since yesterday was all about loving yo momma, I actually couldn’t wait to get to work! Welcome back. Did you have a good weekend? ‘Tis the season for moving house, isn’t it? Not only are some of our friends catching the moving bug, but we’ve certainly caught it as well. Adam and I just moved into a new home over the past week and we’re finally getting settled. We’re still in the same town and very much Minnesota bound.

This month we’ll be married 7 years and will have moved 6 times. Most of the previous moves (including this one) were pretty spontaneous and spur of the moment decisions. I guess we like to switch things up and explore new neighborhoods.

Right before we were able to move into our new house, we actually helped some dear friends move theirs first. So yeah, we’ve been pretty busy and I have had my fair share of packing and hauling boxes already. Whilst we were helping our friends, one of their old neighbors offered to provide us with lunch. How sweet is that? She had a delicious meal prepared for all of us, including carrot cake. It reminded me how much I love it and that I don’t make it nearly enough.

Carrot Cake also happens to be a great dessert to serve when the temperatures rise and you’re not in the mood for something too filling and heavy. Light, moist and simply fantastic. [Read more…]

Homemade Angel Food Cake

Welcome back, everyone! I hope you had the most amazing weekend. I certainly did. Saturday morning one of my dearest friends and I hit up the big mall, aka the Mall of America, and did some serious damage. We arrived just shortly after 12 PM and left at around 10 PM. That’s right – 10 hours later we finally got back in our car and just wanted to crash right then and there. It was also my very first time to watch the various shops close and some lights being turned off. But I wouldn’t have done it any other way. On the way home we talked about how blessed we are that we’re exhausted from shopping. Which is the best kind of exhaustion, btw.

Sunday morning was all about church and family. The way it should be, especially on Easter Sunday. This is actually the first year that I didn’t purchase any kind of Easter candy for Adam and I. Given that today is the day after Easter, I might have to hit up Target and see what I can snag :).

But for now, let’s concentrate on today’s delicious Angel Food Cake. [Read more…]
