Happy October 1st. Fall is in full swing and there’s nothing I love more than to snuggle up, sip on a warm beverage and snack on something yummy. Preferably while holding a piggy. Say what? I shared yesterday in this post that Adam and I adopted two baby guinea pigs. It really was a spur of the moment decision. Somehow we ended up at a pet store on a Friday night and before we knew it, we were holding two piggies. Once we held them, there was no turning back. Pippa and Pippin had found a new home!


I had no idea that guinea pigs are fruit and vegetable fanatics. More vegetable than fruit, really. Watching them chowing down on peppers, carrots, kale, and cucumbers has really inspired me to do the same. I am not kidding – when you watch them get so excited about their “treats” that they can’t help but run around in circles in their cage, I start reaching for carrots without even knowing it. Need to add more veggies to your diet? Get a guinea pig or two ;).

Chocolate Cake with Chocolate Cream Cheese Frosting

Today marks a special day for Deliciously Yum. My blog is turning 1! Yep, that’s right. It’s our first blogiversary. Yay!

Actually… it was last week. After continuously thinking about what to whip up for this sweet occasion, I cannot believe that I missed it. Like totally and completely. Once I woke up Labor Day morning, I realized two things. One – it’s the unofficial start of fall and Two – I missed my first anniversary. Does that make me a bad bloggie mommy?

Can I make it up to you and Deliciously Yum with chocolate cake? Yes? Good. I am glad we’re still talking the same language ;).


I still remember clicking publish for the very first time. A little unsure about what was going to happen next, but beyond excited to share my recipe for Chewy Oatmeal Chocolate Chip Cookies. Still one of the best cookies I ever made to date.

Looking back, choosing to share a cookie recipe as my first post was definitely the right decision. With 27 unique cookie recipes and counting, I was hinting at my cookie obsession and am more than prepared to continue my deep, long love for all things cookies and crumbles.

I am sure I will feel the same way about Chocolate Cake for my first blogiversary when I look back in the future. I mean, Chocolate Cake with an incredible Chocolate Frosting – there’s no question whether or not I made the right decision. [Read more…]

Banana Split Cake

Happy Monday! Welcome to the last full week of July. I know I’ve said it before, but summer just seems like a blur to me so far. I went to the mall on Saturday and couldn’t believe all the back to school sales that were going on. Crazy! Also, I accidentally smelled a candle that practically screamed fall and I totally wasn’t ready for it. I adore that beautiful season, but no, just no.

I was relieved coming back home to a tall glass of iced coffee and a big slice of Banana Split Cake. Summer at its finest.

Trio of Mini Cheesecakes (Dairy-Free)

No-bake Mini Cheesecakes made without dairy. This recipe features a classic graham cracker crust, has the most amazing “cream cheese” filling and is finished with three wonderful toppings.


A couple of weeks ago I challenged myself to find a recipe for dairy-free cheesecake. I probably mentioned before that my husband has developed an intolerance against lactose. Recipes that contain small amounts of butter or even chocolate, usually go over fine. I have found that substituting almond milk for regular milk works extremely well in most recipes, too.

But I was sort of stumped when it came to cream cheese and had made a mental note that cheesecake would probably not be in our future again. But since I like a challenge and don’t give up easily, I changed my mind and was determined to figure this one out.


Also, I wowed that I would never put anything on this little blog of mine if it didn’t taste absolutely delicious. Good thing I live with one of the most amazing food critics. Adam is somewhat of a picky eater and yes, sneaking in vegetables and other “weird” things has become part of my regular routine, ha.

To be completely honest, I was worried about having him taste-test this one. I thought these mini cheesecakes tasted amazing, but there’s always the bias factor… so I finally handed him one of these little cakes. [Read more…]

Peach Cobbler Snack Cake

Traditional Peach Cobbler turned into a super moist Snack Cake. Preparing this cake from scratch is super quick and easy, which makes it the perfect thing to whip up when you only have a couple of minutes to spare.


I cannot wait to tell you all about this yummy snack cake, but first let me start with the weekend. You know the feeling after you attended a concert that keeps you feeling super energized and makes you smile every time you think about the fabulous time you had? And you can’t stop listening to the incredible songs over and over again? That’s me right now.

Now imagine if you got to be part of the actual concert, meaning sharing the stage and performing with one of your favorite singers. Bursting with happy feelings a hundred times over.


Our church hosts different artists throughout the year, and last Saturday we welcomed Keith and Kristyn Getty. They have written some of the most well-known and loved modern hymns like “In Christ Alone” or “The Power of the Cross”. A couple of weeks before the concert, they invited some people in our community to be part of a choir that would perform live with them. And I got to be part of it.

To say we had a blast would be an understatement. It was quite an experience to get to work with professional musicians and witness their talent first hand. Best time ever.

Even though Saturday was a late night, I had tons of energy the following morning and knew the best way to burn it off was in the kitchen.
