Happy Friday to you. This weekend will be the first one in several weeks that we don’t have anything special planned. And I am more than okay with that. Don’t get me wrong, I am always up for an adventure, an experience or a spontaneous trip, but getting to spend 2 full days with no plans and my favorite person, is giving me all the excited feels. In preparation, I decided to whip up a batch of cookies that would help us to properly relax and enjoy the days ahead.
Over the top cookies inspired by Twix candy bars, to be exact. If you have a thing for homemade shortbread cookies, chewy caramel, and a thick layer of chocolate, then I don’t think you need much convincing to try them for yourself.
Classic smoothie ingredients make up these scrumptious Breakfast Cookies. Complete with blueberries, raspberries, granola and almond butter. Yum!
There’s a different story to every recipe I post. Some are family favorites waiting for future generations to be enjoyed, others are inventions I literally dreamed up over night, and a few happen to be complete accidents. Thus is the case with today’s cookie recipe. What should have been a quick and simple breakfast turned into experimenting and eventually resulted in me stuffing my face with cookies first thing in the morning. Happy accidents like this one is what I consider winning.
But it is no accident that you find my very favorite foods that I reach for on a regular basis in these cookies. Blueberries and raspberries have and probably always will be my go-to berries of all time. There’s yogurt in place of eggs & butter. I even substituted some of the flour with extra crunchy granola. I do not have favorites when it comes to cookies. Yes, I am not a big fan of dry or even crispy cookies, but generally speaking, I could never choose. There are just too many great cookie recipes in my life. Not that I’m complaining or anything.
But I was lacking a chocolaty cookie recipe in my collection that left such a big hole, it was basically begging to be filled. And I happily got to work.
Since our cookie consumption can be quite high (just take a peak at my recipe page and have a look through all the cookies I’ve shared over the years), healthy cookies have become a must in our cookie jar.

And the cookie cravings strike again. Also, candy. And what do you do when you can’t decide which one to go for? That’s right. You combine both of them into one. You might also pretend that you’re making them for the blog in order to have an excellent excuse and not feel like you’re just in the mood to indulge and have a serious lack of self-control. Which is the real reason behind what’s happened in my kitchen, of course.
While malt-flavored doesn’t sound like the most delicious thing to me, I can tell you that it totally is. Especially when you find double of it in a sweet treat like these cookies. Hi Everyone! Am I posting a recipe on a Thursday? Yes, it’s happening. I’m so sorry to anyone who loves routine (just like me) and has been thrown off by my posting schedule lately. As you can see, I have a new recipe for you today and another one coming tomorrow. I’ll be returning to my regular schedule (Monday, Wednesday, Friday) next week. Just thought I’d fill you in ;).
The wait for today’s recipe was well worth it though. Ever since making these cookies, I have been on pins and needles to finally fill you all in. Because Peanut Butter Cup Cookies should be shared with as many people as possible. They’re are incredible.
The best part is that they’re also gluten-free. Judging from the amount of comments and questions I get to come up with a gluten-free cookie recipe, I know that there are quite a few of you that will be excited about this one. I baked, tested and finally came out with a winner. It took me a while to get the cookies just right. Achieving the same taste and texture of “regular” chocolate chip cookies was my goal.
