So, avocados. I’m going to let you in on a little secret and I seriously hope we can still be friends. Up until 3 weeks ago I have never had anything containing avocados. No guacamole, yummy salads or whatever else you make with those green things. I know! I understand you might be in complete shock and quite possibly are reexamining this internet relationship thingy we’ve got going on here.

I honestly don’t know what took me so long. Salads and veggies are one of my favorite things, but for reasons that are even a mystery to me, I just couldn’t get myself to try avocados.

And then my SIL, Rachel, came over and took me to Chipotle (also my first time). We ended up sharing a bowl and there was no escaping the guacamole train.

It struck me on Wednesday that Memorial Day weekend is next week. How crazy is that? Please tell me I’m not the only one who was clueless until two days ago…

Once I realized that summer is just around the corner, my fruit cravings immediately set in. So of course it was only a matter of time before I would make a dessert featuring some of my favorite fruits.

They had to be miniature and come together in a matter of minutes. I am the least person who wants to be trapped inside working on dessert while the beautiful Minnesota summer lasts – time is of the essence. We’re not taking any second of the warm rays for granted :).

I am tempted to say that you only need 3 ingredients to make these. Puff pastry, whipped cream and the third one being fruit. Can I count that as one ingredient? I’m confused, but I am going to go out on a limb and say that fruit counts as one ingredient. You could use only one kind of fruit after all. But let’s get not too technical. Okay? Good. I have always had a thing for sandwich cookies. When I saw a picture of whoopie pies the other day, I was instantly reminded that I had never had one. I really couldn’t explain why and was on a mission to change that ASAP.

Now I don’t know what’s inside a classic whoopie pie, but all I wanted to place in the middle of my homemade version was a rich and uber peanut buttery filling. Since chocolate and peanut butter are best friends, I was hopeful that they would play together nice this time around as well.

On my way to work the other day, I saw a sign advertising a visit to New Orleans during Mardi Gras. It captured my attention instantly because I’ve always wanted to go. Yeah, I guess I’m a marketer’s dream. But apart from the well-designed billboard, my longing to visit New Orleans started to well up yet again. It steadily holds #1 on my list of places to go.

It all started two years ago when my husband and I planned a trip to Louisiana. I had done my research and had completely fallen in love as I planned our agenda of things to do and places to eat. Days before our scheduled departure, my husband fell ill and we sadly had to cancel our much anticipated trip to the south.

As I was thinking about that trip once again, I decided that I had waited long enough for fresh beignets (one of the things I was dying to try). It was time I made my own homemade version.

Jelly Doughnuts

The beginning of a new year calls for Jelly Doughnuts. Not just any doughnut will do – they have to be filled with strawberry jelly. Why? I’m not quite sure. Ever since I was a little girl, I remember my mom serving jelly doughnuts sometime during the first couple of days of the new year. It’s one of my favorite traditions…. because, um, they’re doughnuts!!! When everyone makes resolutions of living healthier and looks forward to a fresh new start, we got a break and were allowed one of the fluffiest and most scrumptious doughnuts I’ve ever tasted. After that, we had another 365 days until jelly doughnuts would be allowed for breakfast again. Now you know why I’m so excited to share them today!

Since I have had many years of tasting the most amazing jelly doughnuts from a teeny local bakery, you can be sure that these doughnuts had to endure an extremely picky and choosy palate. I could not believe how authentic these tasted. Food that brings you back to your childhood always is the best kind. These came so close to the real thing – I am not sure I’d be able to tell the difference between the original and my homemade version. So awesome and dangerous at the same time. Hopefully I won’t have to break my mom’s rule of having these only once a year!
