Happy Monday morning, everyone! If I don’t jump right in, I might just explode. Because I’ve been dreaming of and cooking up a storm like it’s my job. Well, it sort of is. The weird thing is that I’ve been making the same thing over and over again. It’s so unlike me to stick with the same recipe and see how many different ways I can incorporate it into our lives.

There are just a few dishes that I tend to make on the regular, but most of what I prepare for dinner involves new recipes and serving up whatever my fellow food bloggers are sharing. I love change and am always trying out something new. At least when it comes to food.

But THIS SAUCE. I can’t seem to get over it.

There have been several attempts at recreating some of my husband’s favorite dishes ever since finding out that lactose just isn’t his best friend. Luckily, there are many substitutions that work extremely well when it comes to emulating butter, yogurt and cheese. Or so we keep telling ourselves, ha. Yes, most of the time (with exceptions to baking and chocolate) I stand in solidarity with Adam and consume far less dairy than I used to. Which means my non-lactose game has to be on point or I couldn’t do it.

But I thought I’d challenge myself and try to come up with a creamy dish that not only wins in the non-dairy department, but also brings true nutritional value and health benefits to the table.

Chick’n Nuggets {Copycat Recipe}

Raise your hand if you have a secret love for chicken nuggets. Both of mine are definitely raised high. Every now and then I develop a huge craving for my childhood favorite. The last time I ordered them at an actual fast food restaurant I seriously cannot remember.

I do however remember walking the isles in the grocery store, debating whether or not I should give in and buy a bag of frozen chicken nuggets. When I stumbled upon the “better for you” section and discovered Morning Star’s Chick’n Nuggets, I immediately reached for a box or two.

I felt great about having made a better decision, but deep down I was questioning if I had wasted a bunch of money. I couldn’t pop them in the oven fast enough once I got home.

May I just say that I have been buying box after box ever since. I even had a friend taste-test just to make sure I wasn’t imagining that meatless nuggets actually do taste as good as I thought.

Teriyaki Chicken Noodle Bowls

With the Christmas season practically knocking on our door, my mind has been occupied with snacks, hot cocoa, bars, cookies, barks, and so much more of the good stuff. I can hardly wait to share everything I’ve been making and am continuing to create for my very favorite time of the year. Especially since ya’ll have been so kind to me and I am having the best time writing, connecting, and sharing with each and every one of you!

But I do have to produce food suitable for dinner time. At least once in a while. So today we’re talking about one of my go-to meals. Stir-fries, lo mein, and pretty much anything you can find on Asian restaurant menus are highly adored in our little family. Last night’s Teriyaki Chicken Noodle Bowls couldn’t have hit the spot more. Umamilicious and nutritious. You won’t be able to empty your bowl quick enough to snag seconds before your loved ones go back for more.
