Salted Caramel Apple Stuffed Chocolate Crumb Muffins

Welcome back, everyone. Are you ready for the first fall weekend of the year? Do you have anything fun planned?

Adam and I were planning on hitting the trails at a State Park in northern Minnesota this weekend to take in the fall foliage, but it looks like we’ll be waiting another week or so. Because the weather through all of September has been absolutely beautiful here. Warm, sunny and picture-perfect, really. One wouldn’t even know fall has officially arrived by walking outside. I can’t remember leaving the house in a t-shirt and shorts this late in September since like forever. While we’re anxiously awaiting the fall colors to arrive, I am more than happy to spend yet another weekend soaking in the sun and pretending that summer is never going to end.

Yes, I adore all things summer, but that doesn’t mean that I am not craving the best fall has to offer. Pumpkin spice lattes (Dunkin Donuts’ are the bomb), fall-scented candles, layering clothes and wearing boots, fresh apples and pumpkins… I could go on and on. Oh, and don’t forget about the food. Comforting, hearty, warm and oh so satisfying.

To be honest, I’ve been dreaming of the amazing food creations for months now. The muffins you see here were swirling around my head for so long – I’m BEYOND pumped to finally get to share them with you today! Continue reading

Coconut Oil Banana Muffins

Coconut Oil, Sweetened Coconut Flakes, and Bananas make for an amazing breakfast treat. Mmmmm!

Coconut Oil Banana Muffins

Raise your hand if banana bread is as much of a kryptonite food for you as it is for me. Banana bread and I go way back, which is exactly why The Best Banana Bread Recipe was posted in the very early days of this blog. It was one of those recipes that I couldn’t wait to post for all of you to see. Because it’s that good. It yields two medium-sized loaves that always disappear before I can even utter the words: “I just baked banana bread”.

So when a couple of overripe bananas couldn’t be ignored much longer the other day, I didn’t have a choice but to pull out the old banana bread recipe. And somewhere along the lines I started to play with coconut oil, coconut flakes and the idea of making muffins instead.

These muffins are just another reason why I love baking and getting creative in the kitchen. Continue reading

Happy Friday! So I guess today’s post should be entitled can’t stop won’t stop. Because my breakfast obsession is still going strong and so is my love for blueberries. You probably guessed by now that blueberries are my fruit of choice when it comes to the early hours of the day. Whether in yogurt, stirred into overnight oatmeal, or completely on their own, I could snack on them all day every day.

But the best way to enjoy those juicy & sweet little things is in the form of muffins, if ask me. Hands down.

This recipe was totally unplanned for me. I set out to make a batch just for the two of us when I realized that my go-to Blueberry Muffins have yet to be shared on da blog. Once I got over the shock, I grabbed my camera and captured what I call morning bliss. Continue reading

Happy Friday, friends! Now that we’ve reached double digits in the month of December, I am feeling the Christmas shopping pressure. The hubby and I have yet to purchase a few gifts together and yes, I still have to make up my mind what to get him as well. I have a few ideas, but life holds some sweet distractions for me. Who wants to step outside and join the hustle and bustle when one could curl up inside with tea and a Hot Cocoa Donut Muffin in hand while watching Elf?! That’s the constant dilemma I find myself in.

It’s a tough job being a food blogger, but someone’s got to do it. Also, someone has got to eat them… so I am blaming my Christmas shopping procrastination on these Donut Muffins. I think they can take it. Nothing could possibly take away from their amazingness.

You need to taste for yourself what is going on here. Continue reading

The month of December is all about savoring for me. Really enjoying every minute of every day leading up to Christmas and ultimately welcoming a new year. I like to slow down, reflect, dream, and simply enjoy the moment I find myself in. Instead of cramming in as many things as possible into my day, I’ve been concentrating on doing more things that I love and make me happy and doing them well, instead of running around like crazy and checking things off my to do list.

Peace and Simplicity – I adore you.

I have been trying to take a break in the middle of each day, enjoying a hot cup of tea and sometimes munching on a little treat. Most recently I’ve been loving these muffins. With their coffee cake like texture and gingerbread flavor, I don’t even have to think twice about slowing down for 15 minutes.

These muffins are calling my name and there’s nothing I can do but dive right in. Continue reading
