Sometimes a long title is indispensable when describing a mouthwatering sensation. I really had no idea what to call these. Too good to be true? Yes, that one came in as a close second. I went for the obvious. Listing every. single. ingredient. In other words chocolate, peanut butter and crackers. The likelihood that you have all of these already on hand is pretty high. I did and had no idea what deliciousness these 3 could produce. No recipe was needed. I had seen pictures and figured they didn’t need much instruction – my sweet tooth took the lead.

It was love at first bite. There’s no question that these sweet sandwiches will make a yearly appearance from now on. I was in pure peanut butter and chocolate bliss. The salt from the crackers goes with the whole salted chocolate trend and couldn’t be more up my ally. So, so swoon-worthy!

And since I like pretty desserts and obviously can’t stop at simple, I decided to chop up Reese’s Peanut Butter Cups and drizzle chocolate on top of each sandwich cookie. Still smiling about that decision. Because really. What is better than peanut butter and chocolate if not more peanut butter and chocolate?

Taking a bite for the sake of picture-taking is never hard as a food blogger. I was happy to take yet another one and should have waited until the end. It is embarrassingly hard to stop at one bite when the other half is staring at you through your lens. It’s equally as hard to tell a certain someone to quit trying to steal yet another Chocolate PB Sandwich before I can’t show all of you what you could be making. And that would be what we call an epic fail. Practicing self-control pays off and is so worth it. Both for you and our co-workers this morning. They are munching on these sweet delights as we speak. And deserve every one of them. We are incredibly blessed to get to work with some of the most wonderful people and I am so glad I get to share my hobby with them. With that being said, these Chocolate PB Sandwiches make for a lovely host/hostess gift for pretty much any occasion. They look fabulous and take little time to make. That way you can give a homemade gift to a special someone without sacrificing too much time!

Chocolate Covered PB Cracker Sandwiches
Yields 25
The most delicious no-bake cookie you will ever make! Chocolate and Peanut Butter Fans rejoice.

  1. 6 ounces bittersweet chocolate
  2. 6 ounces white chocolate or almond bark
  3. 1/2 cup creamy peanut butter
  4. 2 sleeves ritz crackers
  5. 4 peanut butter cups, chopped
  1. Line a cookie sheet or large plate with wax paper. Set aside.
  2. 1. Melt both chocolates in a microwave safe bowl until completely smooth. Set aside.
  3. 2.Using a knife, spread peanut butter on a cracker (enough to cover it completely) and press another one on top. With the help of one or two forks, dunk each peanut butter sandwich into the melted chocolate of your choice and cover completely. Transfer to the wax paper lined plate or cookie sheet and sprinkle with chopped peanut butter cups if desired. Repeat. Transfer to the fridge until chocolate is set, about 15 minutes. Enjoy!
  1. Chocolate Covered PB Cracker Sandwiches will keep up to one week in an airtight container.
  2. I drizzled chocolate over some of the cooled cracker sandwiches and refrigerated them again for another 5 minutes before serving.
