Chocolate Peanut Butter Whoopie Pies

A yummy peanut butter filling sandwiched between two cake-like cookie halves. Whoopie Pies are so easy to make and are a true crowd-pleaser. Whoop whoop!

I have always had a thing for sandwich cookies. When I saw a picture of whoopie pies the other day, I was instantly reminded that I had never had one. I really couldn’t explain why and was on a mission to change that ASAP.

Now I don’t know what’s inside a classic whoopie pie, but all I wanted to place in the middle of my homemade version was a rich and uber peanut buttery filling. Since chocolate and peanut butter are best friends, I was hopeful that they would play together nice this time around as well.

And did they ever. To say I was pleasantly surprised when I took my first bite would be the understatement of the year. I was thrilled to pieces when I was finally able to taste these amazing little pies for the very first time. I mean, just look at them. You know these have to be good!

Before I decided to make these, I had to debunk some misconceived notions. Maybe one of the reasons why I never tried making whoopie pies myself was that I thought they were a lot of work and would take a lot of time.

I have come to learn that making whoopie pies is like whipping up a batch of cookies. No fancy tools needed. You simply mix up the batter, scoop it onto a baking sheet and let ’em bake away. While the whoopie pie halves are doing their time in the oven, you prepare the filling, which approximately takes 5 minutes – less time than the pie halves spend baking. Once finished, you give them a little time to cool before placing a dollop of filling on one half. Place the other half on top and voila. Couldn’t be easier!

The fact that these are so adorable and fit into your hand perfectly is always a great combination, dangerous, but still totally awesome! Maybe that explains why they disappeared so fast…

 Oh, and you should definitely have a glass of cold milk when you enjoy these. Just sayin’. But you already knew that, didn’t you?

Chocolate Peanut Butter Whoopie Pies
Yields 12
Chocolaty whoopie pies featuring a creamy peanut butter filling. One of my favorite "cookie sandwiches" to date. The perfect treat served with a tall glass of milk.

For the Cookies
  1. 1 3/4 cup all-purpose flour
  2. 1/2 teaspoon salt
  3. 3/4 cup unsweetened cocoa powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon baking powder
  6. 1/2 cup (1 stick) unsalted butter, softened
  7. 1 cup granulated sugar
  8. 1 large egg, at room temperature
  9. 1 cup buttermilk, at room temperature
  10. 1 teaspoon vanilla extract
For the Filling
  1. 1/2 cup (1stick) unsalted butter, softened
  2. 1 teaspoon vanilla extract
  3. 1/2 cup creamy peanut butter
  4. 1 cup confectioners' sugar
  1. Preheat oven to 400 degrees F. Line two baking sheets with parchment paper and set aside.
  2. 1. In a medium bowl, whisk together flour, salt, cocoa, baking soda and baking powder. Set aside as well.
  3. 2. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Add egg and stir to incorporate. Mix in buttermilk and vanilla extract and keep beating until combined. Slowly add dry ingredients into the wet and keep blending until just combined.
  4. 3. Using a 1-ounce cookie scoop, place batter onto prepared baking sheets, 12 cookies per sheet. Place in the oven and bake for 12 minutes, rotating the sheets halfway through. Remove from the oven and let cool for 10 minutes before removing. Transfer to a wire rack and let cool completely.
  5. 4. To prepare the frosting, beat butter until light and fluffy. Add vanilla and peanut butter and cream together. Slowly add confectioners' sugar and keep mixing until fully incorporated, about 2-3 minutes.
  6. 5. Once the cookies have cooled completely match them up in pairs by size. Next, either fill a piping or ziploc bag with the frosting and pipe a dollop onto the flat side of one cookie. Place the other half on top and gently press together. Repeat with remaining cookies and filling.
  1. This recipe can easily be doubled.
  2. Store whoopie pies in an airtight container in your fridge for up to 3 days.

  19. I followed the recipe exactly & they e was way too long.Baked them for 6 min. instead of 12. The cakes were dry & too cakey for me. Also not enough sugar for my taste. I don’t know what I did but was very disappointed.

  20. I made these and did them with dark chocolate cocoa powder instead of the regular one and they came out beautifully.
