Chocolate Pot de Creme for One

Ever have a serious craving for chocolate? Nothing satisfies quite like a Chocolate Pot de Crème, especially when you don’t have to share. This one’s just for you!

This fancy dessert is a cinch to prepare, but isn’t near as simple when it comes to taste, you guys. This may be one of the best chocolate treats yet. It’s hard to put into words how wonderful it really is. Creamy, rich, silky and indulgent are a few words that instantly come to mind. This dessert is definitely upping the game when it comes to my chocolate obsession.

Another recipe I’ve been wanting to make for the longest time and finally checked off my list. Oh, and it was quickly added to the list of things to make over and over again. Because it’s da bomb.

‘Nuff said.

This is probably where I should let you know how the dessert for one came to be. As I mentioned earlier in the week, my hubby doesn’t really care too much for chocolate. I know! I’ve always thought that’s a good thing, because who knows what would happen if both of us were crazy over chocolate. I am pretty sure you’d never see anything but that one thing here on the blog.

So when I was searching the house for chocolate the other night, there wasn’t really much around. And Adam could have cared less. Seeing him happily content with a chewy peanut granola bar, I knew someone had to give chocolate some love.

So I made a pot de crème pour moi. I have built quite a tolerance for rich things over the years, so devouring this bowl of lusciousness was no problem for me. This recipe yields exactly 1 cup. So, if you can handle rich desserts only in small amounts, you could totally divide the chocolate crème between two small bowls or cups. Or simply eat half and save the rest for later. Not that I would know anything about that though…

I have no words. Given that I am quite a chatty person, it never ceases to surprise me what food can do to my communication skills. Oftentimes, all I can say is – Mmmmmmm!

Alright, fellow chocolate lovers. I hope you have the most amazing weekend ahead! Can’t wait to talk to you next as we’ll be kicking off my hubby’s birthday week. It might be the most delicious one yet!

  1. 1 1/2 ounces (1/4 cup) dark chocolate, chopped
  2. 1/2 cup plus 2 tablespoons heavy cream
  3. 1/4 teaspoon vanilla extract
  4. 1 large egg yolk
  5. 1 teaspoon granulated sugar
  6. pinch of salt
  7. whipped cream, optional
  1. 1. Place chopped chocolate into a medium bowl. Set aside. In a small saucepan heat heavy cream and vanilla until hot. Pour over the chocolate and let sit for 3 minutes.
  2. 2. Meanwhile, whisk egg yolk, sugar and salt in a medium bowl until fluffy and fully combined. Set aside.
  3. 3. Now whisk the chocolate mixture until fully combined and smooth. Slowly whisk chocolate mixture into the egg mixture until completely incorporated. Pour into a small dessert cup or bowl. Let stand for 15 minutes or until cooled and preheat the oven to 325 degrees F.
  4. 4. Place filled cup into a small baking dish and fill with boiling water until it reaches halfway up the sides of the cup. Cover tightly with aluminum foil and poke several holes into the foil. Place into the oven and bake for 35-40 minutes or until the edges are set, but the center is still wobbly. Remove from the water bath and place on a wire rack to cool for 1 hour. Cover with foil and refrigerate for 4 hours or until ready to eat. Serve with whipped cream if desired.
