My favorite cookies stuffed with Oreos and Cookies & Cream Chocolate Pieces. These cookies are full of crunchy and creamy goodness.
So, we made it. After almost 72 hours, 2 flat tires and a total of 1000 miles traveled, we’re back safe and sound. I am happy to say that Kansas did not disappoint with stilling my longing for hot summer days. So glad that I was able to experience at least one 90 degree day this summer J. My brother-in-law is set for another year of school and we already can’t wait to go back for graduation next year!
The only thing that didn’t go as planned (besides the 2 flat tires, which were no biggie to fix), was that I forgot to pack my newest cookie creation – these Cookies ‘n Cream Cookies. I’d always wanted to make my own version of Cookies ‘n Cream Cookies and thought that they would be just the thing to bring on a road trip.
Well, my mind totally spaced and forgot about packing said cookies (how that happened, I do not know), which meant that I had to bake a batch of good ‘ol chocolate chip cookies dorm room style upon arrival. Just as scrumptious, but not quite the same.
Don’t get me wrong, nothing beats a good chocolate chip cookie, but once you bake a batch of cookies and cream ones, they’re all you can think about.
Guess what I did after returning to our MN home sweet home? Yep, taking a big bite out of one of these goodies. After thinking about them for hours, there was no way I could’ve waited another second. Could you have? Yeah, that’s precisely why we’re getting along so well!
These cookies are a variation of my very favorite Chocoholic Chocolate Chunk Cookies. I slightly adapted the recipe to ensure that all that cookies and cream wonderfulness could shine and I am so glad I chose that recipe. I was actually debating whether or not to post it since it’s somewhat similar to the one I already have on here, but a cookie this good needed to be shared with my invisible internet friends. I have a feeling ya’ll would love them.

Don’t you just love the fact that you can use the word cookie twice when saying the name of these? It makes me smile every time. Cookies and Cream Cookies – is there a name that sounds any more delicious?

- 3/4 granulated sugar
- 3/4 light brown sugar
- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1 large egg
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups all-purpose flour
- 8 chocolate sandwich cookies, broken into pieces
- 5 fun size cookies and cream chocolate bars, broken into pieces
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
- 1. In the bowl of your stand mixer, cream together granulated sugar, brown sugar and butter, about 3-5 minutes. Add egg and mix well. Add one egg yolk at a time and mix after each addition. Stir in vanilla and with the mixer on low speed, add baking powder, soda, and salt until fully incorporated. Add flour and stir until barely mixed in, about 30 seconds to 1 minute. Dough will be slightly sticky.
- 2. Remove from the mixer and fold in cookie and chocolate pieces. Using a large cookie scoop, place cookie dough balls onto the cookie sheet, spacing about 1-inch apart. Place in the oven and bake for 12-14 minutes or until edges are slightly brown. Let cookies rest for 5 minutes on the cookie sheet before transferring to wire racks to cool completely.
- Cookies will keep up to 1 week stored in an airtight container or up to 2 months in the freezer.
