Glowing Skin Smoothie

If you’ve been following my blog for any amount of time, you are fully aware how much I adore baking, sweet treats and indulgent foods. While there won’t be a shortage of these posts in our near future, today I’ve been wanting to share a smoothie that’s not only good for you but also tastes amazing. You would never know that this stuff is healthy. You are probably as suspicious as I was about somebody telling you that this extremely green drink, which practically screams vegetables, doesn’t taste anything like leafy greens or raw produce. Vegetable avoiders can breathe a sigh of relief. I count myself among you, friends. Let’s take a closer look, shall we?

Besides the benefit of making something good for you also taste delicious, the nutritional value to your body definitely deserve to be mentioned in a post like this. Devouring one of these drinks will not only leave you satisfied, but it also fuels your mind and body. With the cold winter months approaching quickly, I set out to create a smoothie that keeps you feeling good inside and looking even better on the outside. Up here in the frozen tundra, also known as the State of Minnesota, your skin needs a little more work and attention to ensure it stays healthy and radiant all year.

Mango, pineapple and even bananas contain powerful antioxidants and are loaded with Vitamin C, a vitamin naturally found in your skin, which helps replenish your skin’s stores. It is also involved in the production of collagen, a protein that keeps your skin firm and elastic. Kale and spinach have too many benefits to mention – Vitamin K, A, E and the list goes on and on. I chose almond milk and peanut butter for a kick of protein and ground flaxseed since they are packed with essential fatty acids, which aid in absorbing all the nutrients. This serving clocks in at 380 calories. You can easily drink half a serving as a snack and save the other half for the next day. It’s also a great breakfast substitute – especially for busy mornings when you don’t have a lot of time. It’ll keep you full and fueled easily until lunchtime and I can’t think of a better way to start your day.

Glowing Skin Smoothie

A delicious & nutritious green smoothie that will keep your skin healthy and looking radiant.

Ingredients
  1. 1 cup frozen mango
  2. 1 medium banana, cut into chunks
  3. 1/2 bunch of kale
  4. 2 handfuls baby spinach
  5. 1/2 cup pineapple chunks
  6. 1 cup almond milk
  7. 1 tablespoon peanut or almond butter
  8. 1 teaspoon ground flaxseed
Instructions
  1. 1. Place the mangos, banana, pineapple and half of the almond milk in a blender. Blend until liquid and no more chunks remain.
  2. 2. Remove the kale from the stems and cut into pieces. Add kale and spinach to the fruit and milk mixture and blend.
  3. 3. Lastly, add the remaining milk, peanut butter and flaxseed. Pulse for a couple of seconds or until well combined.
  4. 4. Serve in your favorite glass and enjoy!
Notes
  1. This smoothie will last one day in the fridge. It could be prepared the night before and enjoyed as a breakfast substitute the next day.
  2. If you like your smoothie thin, add another 1/4 cup of milk or water to your smoothie and pulse to combine.
