Mini Pancakes

Make mornings extra special with Teeny Tiny Pancakes. We all know minis taste even better!


Things are getting so close, you guys. It feels absolutely wonderful to say that Christmas is this week. And I am so ready. Especially for the food. To be quite honest though, it has felt like Christmas Day almost every day for the last week or so. Given all the delicious treats that came out of our kitchen, we’ve definitely been spoiled. And this past weekend was no exception. On Saturday morning I started thinking about what I would like to eat on the morning of the big day and pancakes were the one thing that the hubby and I wanted. But I couldn’t whip up just any old pancakes.


This miniature version of our breakfast favorite may be the only way I’ll eat pancakes from now on. You can devour an entire stack in one bite. How satisfying and mouthwatering does that sound?

I can confidently tell you that these are every bit as good as they look. You may want to give them a go!


While they would undoubtedly make any morning sparkle just a little bit more, they would definitely cause you and your family to have sweet Christmas morning memories for the years to come. Tiny hands can even pick them up and eat ’em finger food style. Oh, and adults can join in the fun as well. Everyone deserves to be a kid on Christmas ;).


As you can see, I drizzled warm Chocolate Hazelnut Spread aka Nutella over my plate on minis. A good dusting of powdered sugar never hurt anyone either and just to keep it somewhat healthy, I added a few strawberries. Can you say YUM?

You, of course, can enjoy your mini pancakes however you like. I can’t imagine that anything could mess these up. They are just so darn tasty!

Mini Pancakes

It's all about Mini Pancakes this time of year. Best enjoyed with a drizzle of warmed chocolate hazelnut spread. Yummy!

  1. 2 1/2 cups all-purpose flour
  2. 3 teaspoons baking powder
  3. 3 tablespoons granulated sugar
  4. 1/2 teaspoon salt
  5. 1 1/2 cup milk
  6. 3 large eggs
  7. confectioners' sugar, optional
  8. chocolate hazelnut spread, optional
  1. 1. Combine flour, baking powder, sugar and salt in a large bowl. Add milk and mix until smooth, scraping sides if necessary. Add eggs and continue mixing until combined and smooth.
  2. 2. Heat a griddle over medium high heat. Spray with nonstick spray and drop about 2 tablespoons per pancake onto the surface of the heated griddle (I actually filled a squeeze bottle with the batter and squeezed out small circles of pancake batter for easier handling and cleanup). Cook pancakes for 2 minutes per side or until golden brown. Serve while warm with your favorite toppings. I heated up chocolate hazelnut spread in a heatproof bowl and drizzled it over the pancakes along with a dusting of confectioners' sugar.
  1. Pancakes are best when eaten immediately.
