Happy Monday! How was your weekend? The last couple of days just seemed to be flying by for us and I seriously can’t believe Monday is already here. Time sure goes by fast when you’re having fun!
We got to celebrate a graduation on Friday, traveled to Iowa to spend time with my best friend’s family and her new baby boy and finally got together for Mother’s Day yesterday. Love all the wonderful people we are so blessed to have in our lives and that we get to be part of theirs.

Since we’ll be attending quite a few more parties and outings in the next couple of months, I started to think of new dessert ideas that I could bring with us. Cookies and bars were certainly on top of my list and since I have a hard time making up my mind, I once again combined the two.

One of my major weaknesses are Monster Cookies. So when these wonderful cookies crossed my mind, I didn’t hesitate to turn them into bars.

I actually tweaked my Monster Cookie Recipe (which happens to be one of my most popular posts) and created these yummy squares. I still remember the giggles going through our house when I pulled these out of the oven :).

Judging by the amount of sweet treats that I whip up, you might think that the excitement of making yet another pan of bars, would be more subdued or contained… but think again. It never ever gets old.

As the name indicates, these bars taste pretty much like a super thick and slightly bigger cookie. Every bite is filled with oatmeal, peanut butter, chocolate and candy pieces. They are definitely rich, but I could devour 2 or 3 in one sitting without any problems. After all, I’m a professional dessert taste-tester, ha.

Monster Cookie Bars

Ingredients
  1. 1 cup granulated sugar
  2. 1 cup brown sugar
  3. 1/2 cup unsalted butter, softened
  4. 1 cup creamy peanut butter
  5. 3 large eggs
  6. 1 teaspoon vanilla extract
  7. 2 teaspoons baking soda
  8. 1 teaspoon salt
  9. 1/4 cup plus 2 tablespoons cocoa powder
  10. 1 cup all-purpose flour
  11. 2 cups oatmeal
  12. 1 cup semi-sweet chocolate chips
  13. 1 cup m&m's
Instructions
  1. Line a 9-x-13-inch baking pan with parchment paper and spray with nonstick spray. Preheat oven to 350 degrees F.
  2. 1. Cream together granulated sugar, brown sugar, butter and peanut butter. Mix until well combined and then add one egg at-a-time to the mixture until all eggs are thoroughly incorporated. Add vanilla and give it a good stir.
  3. 2. With the mixer running on low speed, add baking soda, salt, and cocoa powder. Then add flour and continue mixing until smooth. Finally add oatmeal to the bowl and mix until just combined. Remove bowl from mixer and using a rubber spatula, incorporate chocolate chips and m&m's.
  4. 3. Press dough into prepared baking pan. Place in the oven and bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and let cool for 10 minutes. Remove bars from pan (using the edges of the parchment paper) and transfer to a wire rack to cool completely.
Notes
  1. Bars will keep up to 5 days stored in an airtight container or up to 2 months in the freezer.
