No-Bake Chocolate Pumpkin Granola Espresso Cookies

These no-bake cookies have it all – fudgy indulgence without the guilt, crunchy bits, and are 100% filling. They’re so good you can even enjoy them for breakfast!

Is there anything better than cookies that only take a couple of minutes to prepare from start to finish? Not in my world. Well, maybe there is. I have way too many feelings when it comes to chocolate for breakfast. Yes and yes.

I am blaming Trader Joe’s for today’s creation. If you still can’t get enough of pumpkin, TJ’s is your place. It’s the one store I look forward to visiting the most every week. Three words: All. That. Pumpkin.

From Pumpkin Body Butter (best ever), Pumpkin Croutons to Pumpkin Sea Salt Caramels. I love it all. And just when I thought it couldn’t get better, I picked up a box of Pumpkin Spice Granola. I am now unable to leave the house without a taste of it. I wish I was kidding.

It was only a matter of time before I ran out of conventional ways to enjoy said granola and incorporated it into cookies. Mornings never looked and tasted so yummey!

So let me break down for you what’s inside of these.

Old-fashioned oats, almond flour and cocoa powder are three of my standard ingredients when it comes to no-bake cookies. I just love the added protein, whole grains, and the beautiful color from the cocoa (and don’t forget about the antioxidants ;).

Honey is my choice of sweetener. You could totally substitute agave or maple syrup; I just happen to love the taste and flavor of honey. The same goes for peanut butter. You could use a different nut butter – whatever you like most. I used cornflakes as another binding agent and finally added the pumpkin spice granola. And if you look really close, you might be able to spot a chocolate covered espresso bean or two, which definitely qualifies these cookies more than fit for breakfast. Everything you could possibly need in a handheld goodie.

Almost all of the ingredients get thrown into a food processor and out comes a beautiful cookie dough. While this recipe can easily be doubled, I actually like the fact that it yields exactly 7 cookies. Just enough to get me through busy mornings and to the weekend when I have more time to whip up a semi-healthy breakfast for the two of us, ha. Bacon, anyone?

These cookies are no joke. They keep me more than satisfied until lunch time rolls around and curb my craving for something sweet all day long. Like I said a couple of weeks ago, I’m becoming a breakfast person after all. One cookie at a time.

No-Bake Chocolate Pumpkin Granola Espresso Cookies

Breakfast never tasted so good. Cookies first thing in the morning - it doesn't get much better than this!

Ingredients
  1. 1/2 cup old-fashioned oats
  2. 1/2 cup almond flour
  3. 1 cup cornflakes
  4. 1 tablespoon cocoa powder
  5. 3 tablespoons honey
  6. 3 tablespoons smooth peanut butter (or any other nut butter you prefer)
  7. 1/2 cup pumpkin spice granola
  8. 1/4 cup chocolate covered espresso beans
  9. 1/4 cup dark chocolate, melted (if desired)
Instructions
  1. Line a baking sheet with parchment paper.
  2. 1. In your food processor, combine oats, flour, cornflakes and cocoa powder. Pulse until smooth, about 30 seconds. Add honey and peanut butter and pulse until fully incorporated and a slightly sticky dough forms. If it seems too dry, add another tablespoon of honey or peanut butter. Place dough into a medium bowl.
  3. 2. Fold granola and espresso beans into the dough. Using a large cookie scoop, scoop out 7 cookies (shape into desired form) and place onto the prepared baking sheet. Drizzle with melted chocolate, if desired, and let cookies set at room temperature.
Notes
  1. Cookies will keep up to 7 days stored in an airtight container in the fridge.
