It’s hot, hot, hot out there. For MN standards at least. The past week has been filled with the most amazing weather anyone could ask for. Blue skies, incredible sunshine and temperatures in the lower 80’s. I feel so spoiled. And you bet I’ve been soaking up as many rays as time allows.

My goal is the same every summer. Try to get a tan on. Year after year, I am denying the fact that it’s basically impossible for me to get that beautiful sun-kissed color on my skin. I tend to burn rather quickly and usually return to my normal skin tone shortly after. By the end of summer, it’s basically impossible for anyone’s eyes but mine to detect an actual change in my skin color. Ivory for life, yo.

What’s a girl to do but drown her tanning sorrows in a jar of Nutella? I have adored that silky chocolate spread the very first moment I tasted it. I am pretty sure sparks flew. And since it’s not always appropriate to eat that stuff straight of the jar by the spoonfuls (i.e. when there are other people in my house besides myself), I am forced to find new ways to still get my Nutella fix.

So No-bake Nutella Clusters, it is!

As I sat thinking of a name for these cookies, I almost named them Ultimate Breakfast Cookies. Since honey, cereal and Nutella are common breakfast items, I almost didn’t think twice. Once I took my camera and started to take pictures, I couldn’t help but notice how fudgy and oh so indulgent these are. A name change was inevitable. This is not to say that you can’t enjoy these for breakfast though :).

The hardest part about making these, it the time you have to wait for them to set in the fridge. Everything else is easy as can be. No fuss and pretty much zero chance of messing things up. My favorite kind of recipe. These clusters are one of the most satisfying treats you’ll ever whip up in 10 minutes or less.

No-Bake Nutella Clusters
Yields 12
If you’re a fan of salty and sweet treats, these clusters are for you. Chockfull of crunch and decadence!

Ingredients
  1. 1/2 cup honey
  2. 1/4 cup (4 tablespoons) unsalted butter
  3. 1/2 cup chocolate hazelnut spread (Nutella)
  4. 1/2 teaspoon salt
  5. 3/4 cup dry roasted salted peanuts
  6. 1 3/4 cups Special K cereal
Instructions
  1. Line a baking sheet with parchment paper or silpat liner and set aside.
  2. 1. In a medium saucepan, combine honey and butter. Over medium-low heat, cook until both ingredients are fully incorporated. Bring to a boil and let cook for about a minute. Remove from the stove and stir in Nutella and salt. Continue stirring until mixture is smooth.
  3. 2. Pour peanuts and cereal into a large bowl and mix. Pour Nutella mixture over the dry ingredients and stir until evenly coated.
  4. 3. Using a large cookie scoop, drop cluster mixture onto the prepared baking sheet and shape into cookies, if necessary. Place in the fridge for at least 1 hour or until set.
Notes
  1. Clusters will keep up to 1 week stored in an airtight container in the fridge or up to 2 months in the freezer.

  2. Just do what I do and get a spray tan! Haha! I am just too nervous about getting wrinkly, so I try and stay out of the sun as much as possible. Self tanner to the rescue!

    These nutella clusters sound amazing! Love that they’re no bake. It’s been super hot in CA too, so anytime I can avoid turning my oven on is a win for me!

  3. Tanning … it always takes me until the end of the summer and then we start piling on long sleeves and jeans. Help a white girl out! 🙂 Nutella … light brown, silky smooth … sounds like a perfectly acceptable tanning option.
