This week must be the week of copycat recipes here at Deliciously Yum! We kicked off the week with Chicken and Gnocchi Soup – inspired by a popular restaurant favorite. Today we’ll take a look at Homemade Oreo Cookies. Oreos are one of my favorite store-bought cookies. They are perfect for dunking into a tall glass of milk and who doesn’t like to take them cookies apart to get to the luscious cream inside? Do you enjoy the whole cookie or are you a twister like me? I tend to savor my food and always try to make it last as long as possible. Now that you developed a craving for Oreos but might not have any on hand, here’s how you make them.
I’ll be honest. These cookies do take a little bit of time to make. They don’t involve a lot of technique or skill, but a little bit more time than the average cookie. This is mostly due to the hours these guys require to hang out in the fridge. You can also prepare the dough ahead of time and put it into the fridge until the next day if you’re in a crunch. They are so worth it! You’ll be able to taste the love that went into them.
Oh yes, looking at these I am so glad I persevered. I had so much fun creating this little recipe for ya’ll.
My favorite part about these sandwich cookies (besides the fact that they are so close to the real thing) is that you’ll get to use real chocolate to make the dough. Melted, scrumptious, semi-sweet chocolate to be exact. Something you won’t find in regular Oreos. Not only are my copycats gorgeous to look at, but they certainly satisfy that Oreo sweet tooth, which most of us know just too well.
I think the proof is in the pudding… or in between two crunchy cookie halves!
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 cup cocoa powder
- 1/2 teaspoon baking soda
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 2 sticks butter (1 cup), melted
- 1 cup semi-sweet chocolate chips, melted
- 1/4 cup butter, softened
- 1 cup confectioners' sugar
- 1/2 teaspoon vanilla
- 1-2 tablespoons milk
- Preheat your oven to 325 degrees F and line a baking sheet.
- 1. Sift together the first four ingredients and set aside. Using a stand mixer, mix together the sugar, egg and vanilla until creamy.
- 2. Melt the butter and chocolate chips in separate bowls. Once melted, stir the chocolate mixture into the butter and combine.
- 3. With the mixer running, add the chocolate butter mixture to the bowl.
- 4. Once thoroughly combined, slowly add the dry ingredients to the wet and combine. Dough will be sticky. Put the bowl into the refrigerator for one hour.
- 5. Remove the bowl from the fridge and divide into 2 equal halves. Form two, round logs (about 2 inches in diameter) and wrap in clear wrap. Put the logs back into the fridge for two hours or overnight.
- 6. Take out one log at a time and cut into 1/4-inch slices (if you take out the dough the next day, let it sit on the counter for 10 minutes before cutting). If you want to make perfectly round cookies, use a 2-inch round cookie cutter to cut out round cookies out of the 1/4-inch slices. Put the cookies onto the baking sheet and put into the oven. Bake for 20 minutes. Remove the cookies from the oven, let cool for 5 minutes and transfer to a cooling rack. Continue with the second cookie dough log.
- 7. While the cookies are cooling, mix all the ingredients for the filling together until smooth.
- 8. Place 1 teaspoon of filling into the middle of a chocolate cookie. Place another cookie on top and press down until cream filling is equally spread between the two cookies. Repeat until all cookies and filling are used up.
- Sandwich Cookies will keep up to 5 days on the counter or 2 months in an airtight container in the freezer.
