Breakfast has never been so easy or tasted better. Overnight Blueberry Cobbler Oatmeal – get in ma belly!
Let’s talk breakfast, everyone. More specifically oatmeal. In the most delicious way possible. Because this version, you guys, tastes like one of my very favorite desserts. Like sweet, juicy, and comforting Blueberry Cobbler. And we all know that eating dessert for breakfast is the epitome of a good start to your day. Especially when you don’t even have to move a finger in the morning to whip up this yumminess. It’s ready to go whenever you are – can we give each other a virtual high five for easy peasy yet utterly scrumptious breakfasts?!
Breakfasts are the one thing that I’ve really started to cherish and enjoy ever since starting this blog. It’s funny how something that I could have cared less about just a little over a year ago, has now become one of the things I’m most passionate about. Breakfast for dinner has definitely contributed, but the fact that you, my readers, are encouraging me and have shown some serious love for my breakfast recipes, is probably the biggest reason.

The concept of overnight oatmeal has been swirling around the internet for quite some time now. And to be completely honest, I was less than intrigued at the thought of it. I was pretty hesitant to give it a go simply because I didn’t quite trust it. I honestly thought that the whole thing would either turn into a mushy mess or be way too thick for my liking.
I most certainly learned not to judge a book by its cover after trying it out for myself. I created this recipe specifically the way I like my oatmeal. I wanted it to taste the way it does when I freshly make in on my stovetop on a lazy Saturday morning. But with a twist, of course.
My version is creamy, still has some bite, and gets me out of bed in no time. Nothing sounds more beautiful than Blueberry Cobbler first thing in the morning these days ;).
Another great thing about this oatmeal is that while it tastes delicious chilled out of the fridge, you can even heat it up for 30 seconds or so in the microwave and enjoy a warm breakfast treat anytime, which comes in especially handy on cold winter days.
The blueberries, brown sugar, and cinnamon have blueberry cobbler written all over. The fresh blueberries stay nice and juicy and explode in your mouth. As you can see in these pictures, I like to top mine with some pecans (my favorite) and a drizzle of honey. Yum!

- 1/2 plus cup plus 2 tablespoons quick-cooking oats
- 1/2 cup milk, I used almond but any milk will do
- 3 tablespoons light brown sugar (I use 2 if I drizzle on extra honey)
- 1 teaspoon ground cinnamon
- 1/2 cup fresh blueberries
- pecans, optional
- honey, optional
- 1. In a medium bowl, stir together oats, milk, brown sugar, and cinnamon. Fold in blueberries.
- 2. Divide evenly between 2 small bowls and cover to refrigerate. Leave in the fridge for at least 5 hours or overnight. Enjoy with a drizzle of honey and your favorite nuts, if desired.
- Oatmeal is best when enjoyed within 24 hours.
