Oreo Cookies

OreoCookies8

This week must be the week of copycat recipes here at Deliciously Yum! We kicked off the week with Chicken and Gnocchi Soup – inspired by a popular restaurant favorite. Today we’ll take a look at Homemade Oreo Cookies.  Oreos are one of my favorite store-bought cookies. They are perfect for dunking into a tall glass of milk and who doesn’t like to take them cookies apart to get to the luscious cream inside? Do you enjoy the whole cookie or are you a twister like me? I tend to savor my food and always try to make it last as long as possible. Now that you developed a craving for Oreos but might not have any on hand, here’s how you make them. [Read more…]

Chicken & Gnocchi Soup

What’s for dinner? Even though I write a food blog and have food on my mind probably more than the average person, I can’t escape the daily question about our evening meal. You would think that it would be easy for me to throw anything together and to come up with something rather quickly… well, think again. While most of the previous statement is correct, food menu planning and making sure that dinner is ready once 6 o’clock hits is equally a challenge to me as to most cooks in America. This is exactly why I love making soup. In a short period of time, you can throw together a meal that takes only one pot to prepare, it is filling and the perfect vehicle to sneak in extra vegetables, and it is the gift that keeps on giving. To me, soup tends to taste better on the second day than it did on the first. The flavors had some time to develop and make for an even more satisfying and well-rounded meal. This is where Chicken & Gnocchi Soup comes into play.

Pumpkin Bars with Cream Cheese Frosting

PumpkinBars

In our house fall wouldn’t be fall if we didn’t have these bars. Since almost all the trees are in full foliage, it was definitely time to bake up a batch. This is a family favorite that has been passed down from generation to generation. Something so pure and perfect that is simply unforgettable and loved by all. Tweaking recipes and changing them up a bit is something that comes naturally to me. I am definitely not one that enjoys the same thing over and over. Hello food blog! I like to keep myself engaged and try new things whenever possible. But I realize that some things are meant to be preserved and cherished. Pumpkin Bars with Cream Cheese Frosting are certainly one of them. I follow the recipe to a T and can’t think of a time that these didn’t come out just right. Another reason why this is a family fave, I suspect. [Read more…]

Caramel Stuffed Cider Cookies

I am such a sucker for all things containing caramel. Caramel seems to make everything better and more scrumptious. It surely enhances the taste of most treats and causes ultimate gooeyness, which is the icing on pretty much all delights. Buttery goodness and a luscious brown hue are irresistible. When I came across these cookies, not a single doubt remained in my mind that I had to give them a try. This is not your average cookie recipe – it contains a special ingredient which I will tell you about in a second. On this beautiful fall day (around these parts anyways), you deserve a cookie that will make your palate sing.

Fudge Brownies

FudgyBrownies

How about a pan of homemade brownies to start off your week? Fudge Brownies to be exact. Brownies are the ideal dessert for pretty much any occasion. Fresh, warm brownies that are slightly gooey are my absolute favorite. I also happen to love the convenience of this one bowl dessert. When I started my search for the perfect brownie recipe, I wanted to preserve the simplicity of these fabulous bars without sacrificing taste. You see, I had tried many brownie recipes from scratch but somehow never came across a recipe that would have me happily ditch the boxed kind. I missed the fudgy, dense, and somewhat crispy layer and sides. Homemade brownies always reminded me of chocolate cake, which isn’t necessarily a bad thing – except for when you’re craving a fabulous brownie to sink your teeth into. Well, I am proud to announce that I have cracked the code. This recipe was crowned first place. Oh, how I love winning; it tastes absolutely delicious! [Read more…]
