Harvest Apple Fritters

Fritters. These little pillowy (how is pillowy not a word?) bites can be filled with pretty much anything – meats, fruit, vegetables, or anything else that pops into your head. Since we recently picked plenty of apples, my choice was an obvious one. I was so pleased with how these fritters turned out. You see, I always have had a problem when it comes to producing perfectly fried foods. The oil always seems to either be too cold or too hot (even with the help of a thermometer) and I end up with either burned or soggy pieces of food. No bueno. Since I like a challenge and am not easily deterred, I had to give it yet another try. This time around, I used less oil and after said oil reached the perfect temperature (350 degrees), I turned the heat to medium low and started to drop in spoonfuls of dough. Out came the most perfect fritters and I couldn’t have been more elated (yes, I am easily entertained). Don’t know if any of the above mentioned changes have anything to do with making beautiful fritters, but I like to think that these fritters are foolproof. If I can do it, you certainly can, too!

Mulled Apple Cider

There are a handful of drinks that have the same comforting taste and gorgeous look as apple cider. I will show you in a minute how to make it, but let’s begin with our visit to a nearby apple orchard that I had been hoping for last week. We arrived as soon as it opened since the orchard is only about 15 minutes away from our house. It was a crisp and sunny morning, which added to the ultimate apple orchard experience. Happy Fall! As promised, we are kicking off the week with a fall-inspired goodie. I still can’t believe we’re already entering the last quarter of the year. Here’s to all things cozy, comfy, and beautiful. It is no secret that I adore summer, but I am so glad that we live in a place where we can thoroughly enjoy each season to its fullest. Pizza Rolls

Finally! We’ve made it to the end of the week, ya’ll. Did anyone else feel like this week would never come to an end? I can’t really figure out why this week had me longing for the weekend – I am just glad it’s here. I’m hoping to take a trip to an orchard nearby this weekend and do some apple picking. There’s just nothing like a freshly picked apple. It also happens to be one of my favorite fall activities. Get ready for some apple recipes coming your way, starting next week! I can’t wait. Chocolate Chip Cookies

It’s Cookie Wednesday! I know Wednesday has been dubbed “Hump Day”, but I prefer Cookie Wednesday. I can’t think of a better way to celebrate the middle of the week than with a scrumptious chocolate chip cookie. The perfect reward to get you through the next couple of days. This recipe is my go to. We’ve been making them ever since I can remember and I never felt the need to look for a different cookie recipe. These are my husband’s favorite… he asks for them at least once a week and is the happiest guy when he spots a fresh batch in the cookie jar. They come out perfect every time. I like my cookies to be crispy on the outside and chewy on the inside. If you prefer a slightly crunchy cookie throughout or a chewy cookie without any crispiness whatsoever, this is the recipe for you. You simply adjust the baking time and voila. [Read more…]
