Blueberry Belgian Waffles with Whipped Cream

How was your weekend? We were spoiled with some beautiful weather. You can definitely tell that fall is officially here. The temperature during the day has been in the upper 60s with colder nights in the lower 40s, which is why we decided to host a bonfire on Friday night. Having a fire on a somewhat chilly night seasoned with perfect S’mores and good conversation is the perfect way to start any weekend. Some of us even got to see some shooting stars! Saturday was spent with cleaning and sprucing up our home as planned. We ended the weekend with some family time at my in-law’s home to watch the Packers dominate. Woohoo!

Here’s something I have to confess. I love Mondays. Sunday afternoons always have me looking forward to the next morning. As much as I enjoy the weekend, there’s just nothing like a fresh start. I am also an absolute morning person, who enjoys the beginning of every new day. Add a new week to that and you have one of the most cheerful people you’ve ever met. I also know that there are plenty of people who don’t share my enthusiasm for Mondays. Don’t worry, the weekend is not far off! Whether you love or despise Mondays, here’s a recipe that will brighten your day either way.

Hooray! Are you looking forward to the weekend as much as I do? I love how Fridays always bring a sense of excitement with them. Whether it’s the fact that people are in good moods, the thought of sleeping in or the simple sense of enjoying some free time, I simply love the feeling of it all. Also, when I was younger Fridays were the one night of the week on which the kids got to choose the evening activities and the food that was going to be served for dinner. We usually chose pizza or fish sticks and the occasional stop at McDonald’s was definitely on the list. Getting to pick our favorite movie or board game afterward was icing on the cake. [Read more…]

Chocolate Chip Muffins

Even though summer is my favorite season and I sure will miss it in the next couple of months, I am excited about being able to turn on the oven again and enjoy baking to its fullest. First on my agenda were Chocolate Chip Muffins. Being adventurous in the kitchen and trying new recipes is something I absolutely adore, but I do happen to have found the perfect (in my opinion) muffin recipe. No need to search for yet another recipe. This is it, you guys. I remember my first bite and how much it reminded me of a bakery-style muffin with its fluffy texture and subtle sweetness, perfect for highlighting chocolate chips or anything else you wish to add to the luscious batter. My mouth is watering just thinking about ’em…

Tomato Soup with Grilled Cheese Croutons

Football Season is finally here. Yay! When we woke up yesterday (Sunday) morning, we could hardly wait until kickoff. Promptly at 3:25 with our jerseys on and fantasy football apps open, we were ready to cheer on the Green Bay Packers. Go, Pack, Go! It was a pretty heated game and even though we lost, it gave us a great taste of what’s to come for the rest of the season; it also reminded me of Homemade Tomato Soup with Grilled Cheese Croutons. I had seen variations of tomato soup with these cute croutons all over Pinterest a couple months back and I couldn’t wait to make it myself. Tomato Soup also happens to be my favorite soup of all time. So you better believe this one will tickle your taste buds.

Petite Vanilla Bean Scones

I’ve got a great recipe for you today. It is one that I have been wanting to share with you for quite a while now. It is also the first recipe I ever created. I was really nervous and didn’t know if it was going to turn out the way I had hoped, and to my surprise, it totally did. It was a thrilling feeling and I hope ya’ll will love them just as much as I do. Not only are they a great afternoon snack or dessert, but they also make for a yummy breakfast. I ended up sharing ours with new neighbors that had just moved into the neighborhood and I am pretty sure they were a great hit. Feel free to share them with your loved ones or keep them in a special place just for yourself, I am not going to judge :).
