Hi Everyone! Am I posting a recipe on a Thursday? Yes, it’s happening. I’m so sorry to anyone who loves routine (just like me) and has been thrown off by my posting schedule lately. As you can see, I have a new recipe for you today and another one coming tomorrow. I’ll be returning to my regular schedule (Monday, Wednesday, Friday) next week. Just thought I’d fill you in ;).
The wait for today’s recipe was well worth it though. Ever since making these cookies, I have been on pins and needles to finally fill you all in. Because Peanut Butter Cup Cookies should be shared with as many people as possible. They’re are incredible.
The best part is that they’re also gluten-free. Judging from the amount of comments and questions I get to come up with a gluten-free cookie recipe, I know that there are quite a few of you that will be excited about this one. I baked, tested and finally came out with a winner. It took me a while to get the cookies just right. Achieving the same taste and texture of “regular” chocolate chip cookies was my goal. And I’m certain I’ve succeeded.
