Raspberry Cobbler in Dessert Pizza form. One of the very best ways to enjoy pizza!
No pizza night is complete without dessert. I am usually not picky when it comes to satisfying my sweet tooth. Since I pretty much love any and everything, most treats are usually more than acceptable. But there are a few that get me a little more excited than others. Ooey gooey brownies, freshly baked cookies and yup, you guessed it, dessert pizza. Because the only thing that’s better than having pizza for dinner is having pizza for dessert as well. High five, fellow pizza lover!
Dessert pizza is such a quick, delicious and super versatile sweet treat to whip up. In honor of our first 90+ degree day yesterday, I decided to celebrate with one of summer’s best berries – raspberries. Putting a raspberry cobbler spin on our dessert favorite. Since I also happen to be a huge fan of cobblers, I knew that combining two killer desserts into one couldn’t be anything but ah-mazing!
My love for raspberries has been very well documented so far. If you adore another type of berry or even cherries, you could totally make a swap and use whatever you prefer. I also think that peaches could make for a super yummy pizza. Peach cobbler pizza? Sign me up!
But let’s talk about the creation at hand first. Instead of making my own pizza dough, I decided to go with a store-bought version. I have been buying Trader Joe’s fresh pizza dough for years and that’s exactly what I decided to use for this pizza. A canned of frozen plain dough totally works too though.
After that, I decided to use prepared raspberry filling as well. Once the pizza dough is pressed into your pizza pan, you simply spread the raspberry filling on top (it basically acts like your sauce) and continue with the crumb topping. Made out of cold butter, brown sugar, flour, cinnamon and a pinch of salt. Once baked to golden perfection, I just had to give it a good drizzle with a luscious sweet glaze.
You may have noticed by now that I cut the pizza into squares and some of the squares into triangles. You could go the traditional route and cut the pizza into bigger triangles like you would a savory pizza. I prefer to cut it into smaller pieces and serve them on a small platter like you see in some of the pictures. Totally up to you and your appetite ;).
- pizza dough (I used 1 16-ounce package of fresh dough found in the freezer section at my grocery store)
- 8-10 oz can raspberry pie filling
- 1/2 cup light brown sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- pinch of salt
- 1/4 cup cold unsalted butter, cut into pieces
- 1 cup confectioner's sugar
- 1-2 tablespoons milk
- Preheat oven to 400 degrees F. Grease a 12-inch pizza pan.
- 1. Remove pizza dough from packaging and press into the prepared pizza pan. Spread raspberry filling evenly on top.
- 2. In a medium bowl, combine sugar, flour, cinnamon and salt. Using a pastry cutter, add butter pieces and mix until small crumbs form. Sprinkle over the raspberry filling. Place pizza into the oven and bake for 15-18 minutes or until the pizza crust and crumb topping starts to brown. Remove from the oven.
- 3. While the pizza is cooling, whisk together confectioner's sugar and milk until smooth. Drizzle over the warm pizza and cut into desired shapes. Enjoy!
