Salted Caramel Brownie Pie

Brownie Pie filled and drizzled with Salted Caramel Chocolates & Sauce.

Happy Monday! How was your weekend? Did you get to do something fun?

Our weekend was filled with beautiful weather, spending some much needed time with friends and a visit to the Farmer’s Market. It was the opening weekend for said Farmers’ Market and I was THIS excited to go. There are some things that are essential to summer and paying a visit to the Farmer’s Market is definitely one of them.

I loved seeing all of the fresh produce and beautiful flowers – such a great sight after a pretty long and tough winter. Also, I totally forgot what it feels like not being wrapped in 5000 layers of clothing and feel the warm sun. So good!

Oh, and I finally got around to watching “Frozen”. Yeah, I realize I am probably the only person who hadn’t seen it. Always behind on current trends – but better late than never, ha!

It’s not even funny how much I was able to relate to Olaf. My reaction to the wonderfully warm weather this weekend was pretty much the same as his when he started the fire in the fireplace. So glad I finally know what the hype is all about – now can someone please tell me how to get the songs out of my head??

Also, making this pie while watching the movie was one of my favorite activities this weekend. Memories I want to hold onto for a really long time. We’re talking brownies and salted caramel, friends.

It’s what makes life that much sweeter.

This also means that I can never again watch the movie without making this delicious pie. It’s a thing now and I am pretty sure it’ll happen many more times since I am so smitten with Frozen ;).

Brownie pie had been roaming through my head for weeks now. I played around with my go-to recipe a bit and came up with an extra fudgy and gooey brownie pie. It’s much more than your average brownie. It needed to resemble a real pie as much as possible, which is exactly what you get.

It’s rich, silky, and beyond satisfying. And tastes best when eaten warm, possibly with a big scoop of ice cream or extra caramel drizzled on top or both, ha.

Speaking of which, I used my Homemade Salted Caramel Sauce, but store-bought caramel sauce will work just fine. The middle layer of this pie hides a couple of caramel chocolate squares as a surprise. I happen to like Dove Sea Salt Caramel Dark Chocolates, but again, use whatever you prefer.

You really need to give this a try – so much better than your average brownies. This was one of those recipes I couldn’t take pictures of fast enough – the hubby and I were ready to dig in as soon as this came out of the oven. It smelled beyond, just beyond.

Hope you get to dig in too – it’s the right thing to do on a Monday!

  1. How much did you LOVE Frozen? Wasn’t it the best? I rented it 2 different times from iTunes. 1 time just wasn’t enough. Made me feel like a kid again. This salted caramel brownie pie is INSANE! I actually like brownie way more than cake and cupcakes. It’s what I request every year for my birthday. Might have to request this exact one next year : )

    • Don’t even get me started :). I am pretty sure I’ll be watching it many more times.
I am so with you – I prefer brownies over cupcakes or cakes any day. It’s hard to beat a perfectly chewy, chocolaty and preferably salted caramel brownie!

  2. So guess what…I have yet to see Frozen! How sad is this?! I do however need this brownie pie in my life right now. I like brownies in pie form.
